Hello everyone! Today, I’ll be sharing a recipe for delicious seasoned bean sprouts (Sukju Namul Muchim) that are wonderfully crisp. It’s a simple yet satisfying side dish that adds wonderful flavor to your meal.

First, wash the bean sprouts thoroughly under running water. It’s important to rinse them carefully to remove any dirt or impurities. Bring a generous amount of water to a rolling boil in a pot, add a pinch of salt, and once boiling, add the washed bean sprouts. Blanch them for just 2 to 3 minutes over high heat – this short cooking time is the secret to keeping them crisp! Avoid overcooking, as they will become mushy.
Step 3
While they are blanching, carefully take out a few sprouts, rinse them under cold water, and check if they look more translucent and have a crisp texture. Once they reach your desired crispness, immediately drain them in a colander, pressing out as much water as possible. Rinsing them immediately in cold water after blanching helps to cool them down, further enhancing their crispness. Ensuring all excess water is removed will prevent the salad from becoming watery.
Step 4
To the drained bean sprouts, add all the seasoning ingredients. Mix in 2 tsp of Korean soup soy sauce (or regular soy sauce), 1/2 tsp of salt, 2 tsp of sesame oil, the finely chopped green onion, and a generous amount of toasted sesame seeds for nutty aroma. Now, gently toss the ingredients together with your hands, as if you’re shaking them lightly, until everything is well combined.
