When you’re a bit tired of plain grilled meat, how about a chop steak? Using beef chuck slices meant for grilling shortens the marinating time, and by combining various sauces you have at home, you can transform it into a delicious steak sauce! Enjoy a sophisticated solo meal with this one-bowl rice dish.
Chop Steak Ingredients- 4-5 slices of beef chuck (thinly sliced)
- 1/2 of each bell pepper (various colors: red, orange, yellow)
- 1/2 onion
- 3 cloves garlic
Beef Chuck Marinade- Generous amount of olive oil (enough to coat the meat)
- Herb salt, to taste
- Ground black pepper, to taste
- A pinch of rosemary powder or other dried herbs (optional)
Special Steak Sauce Ingredients- 5 Tbsp of store-bought Tonkatsu sauce
- 2 Tbsp of ketchup
- 1 Tbsp of oligodang (corn syrup) or similar sweetener
- 1 Tbsp of cooking sake (mirin)
- 1/3 Tbsp of minced garlic
- 1/3 Tbsp of oyster sauce
- Generous amount of olive oil (enough to coat the meat)

Cooking Instructions
Step 1
First, pat the beef chuck slices dry with paper towels to remove any excess moisture. Lay them flat and season generously with olive oil, ensuring the entire surface is coated. Sprinkle evenly with herb salt and ground black pepper. If you have rosemary powder or other dried herbs, add them now for an enhanced aroma. Let the seasoned beef sit for a few minutes to allow the flavors to meld.
Step 2
Prepare the vegetables by deseeding the bell peppers and then cutting them, along with the onion, into bite-sized pieces. You can also mince or thinly slice the garlic. Avoid cutting the vegetables too small, as they might break apart during cooking.
Step 3
To make the special steak sauce, combine all the sauce ingredients in a bowl: 5 Tbsp Tonkatsu sauce, 2 Tbsp ketchup, 1 Tbsp oligodang, 1 Tbsp cooking sake, 1/3 Tbsp minced garlic, and 1/3 Tbsp oyster sauce. Whisk well with a fork or spoon until smooth and lump-free. Preparing the sauce in advance will make the cooking process smoother.
Step 4
Heat about 1-2 Tbsp of olive oil in a skillet over medium-high heat. Place the marinated beef chuck slices in the pan, ensuring not to overcrowd it, and sear them until golden brown on both sides. Cook quickly to avoid overcooking, which can make the meat tough.
Step 5
Once the beef loses its raw red color and is cooked to a pleasant rosy pink, remove it from the pan and set aside on a plate. Using the same pan where the beef was cooked helps to retain its delicious flavors. Cut the cooked beef into bite-sized pieces once it’s cooled slightly.
Step 6
Add a little more olive oil to the same pan if needed. Add the sliced onions and garlic, and stir-fry over high heat until fragrant and the onions become translucent. Then, add the colorful bell peppers and season lightly with herb salt. Stir-fry briskly to keep the vegetables crisp-tender.
Step 7
Once the vegetables are partially cooked, pour the pre-made special steak sauce into the pan. Add the cooked beef chuck back into the pan and toss everything together to coat evenly with the sauce.
Step 8
Continue to stir-fry over high heat for another 1-2 minutes, allowing the sauce to coat all the ingredients evenly and develop a glossy finish. Be careful not to overcook, as this can make the vegetables mushy and the meat tough. The goal is a beautifully glazed chop steak.
