Crumble Ingredients

  • 1 cup All-purpose flour (approx. 120g)
  • 3 Tbsp Almond flour (approx. 30g)
  • 5 Tbsp Brown sugar (approx. 75g)
  • 4 Tbsp Cold butter (approx. 80g), cut into small cubes
  • 1 cup Blueberries (approx. 150g)

First, in a bowl for the crumble, combine the all-purpose flour, almond flour, and brown sugar. For the butter, ensure it’s cold and instead of scooping it in large chunks, cut it into small cubes, about 1cm in size. This makes it much easier to mix with the dry ingredients.

Before the butter melts, quickly use your hands to rub and combine the dry ingredients with the butter. Gently rub the mixture with your fingertips. It’s important to work quickly so the butter doesn’t melt, and to achieve a texture where each ingredient is distinct and resembles fine crumbs, rather than a cohesive dough.

If the mixture seems too dry or has large butter chunks, don’t worry! Assess the consistency and gradually add a bit more all-purpose flour or almond flour. Gently mix with your hands until it forms fine crumbs. The key to success here is using cold butter from the start.

Take about two-thirds of the crumble mixture and place it into your oven-safe dish. Press it down firmly with your hands or the back of a measuring cup to create an even, compact base. You can enjoy it as is, or chill it before slicing. Lining the bottom with parchment paper will make it much easier to remove later.

In the same bowl where you mixed the remaining crumble ingredients, gently toss the blueberries. Be careful not to crush the berries. Then, carefully sprinkle this blueberry mixture over the pressed crumble base in the dish. The goal is to cover it loosely and naturally, without disturbing the base too much.

Preheat your air fryer to 170°C (340°F) and bake the blueberry crumble for about 25 minutes. It’s ready when the top turns a lovely golden brown. If using a conventional oven, bake at 180°C (350°F) for 30-35 minutes.
