Cucumber Salting

  • 1 liter water
  • 1 cup coarse sea salt (using a paper cup)

It’s important to wash the cucumbers thoroughly. Gently rub them with a soft cloth or your hands using a little coarse salt. Avoid rubbing too hard, as this can damage the cucumbers and make them mushy later.

Trim off the very ends of the cucumbers. Cut them into 3-4 pieces depending on their length. Then, make a cross-shaped cut (like an asterisk *) into each piece, stopping about 1 cm from the bottom. This will create a pocket to easily stuff the filling.

In a clean bowl, dissolve 1 cup of coarse sea salt (measured with a paper cup) into 1 liter of water. This amount is perfect for salting 10 cucumbers. Submerge all the cut cucumbers in the brine and let them salt for about 1 hour. Flip them two or three times during this hour to ensure they are evenly salted for a crisp texture.
