This beef bulgogi is packed with mushrooms and fresh vegetables, creating a wonderfully juicy sauce. It’s made to be tender and subtly sweet. Enjoy this flavorful dish that’s perfect as a side for rice or as a main course for entertaining guests.
Main Ingredients- Beef for Bulgogi 600g
- Oyster mushrooms 150g
- Carrot 1/2 medium
- Onion 1/2 medium
- Scallions 2 stalks
Marinade Ingredients- Soy sauce 5 Tbsp
- Oyster sauce 1 Tbsp
- Sugar 2 Tbsp
- Oligosaccharide (or corn syrup) 1 Tbsp
- Sesame oil 2 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Sesame seeds 1 Tbsp
- Black pepper to taste
- Pineapple juice 100ml
- Minced garlic 2 Tbsp
- Soy sauce 5 Tbsp
- Oyster sauce 1 Tbsp
- Sugar 2 Tbsp
- Oligosaccharide (or corn syrup) 1 Tbsp
- Sesame oil 2 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Sesame seeds 1 Tbsp
- Black pepper to taste
- Pineapple juice 100ml
- Minced garlic 2 Tbsp
Cooking Instructions
Step 1
First, drain the excess blood from the beef slices for bulgogi and cut them into approximately 5cm lengths. This ensures the marinade penetrates well and results in a pleasant texture when cooked.
Step 2
In a bowl, combine 5 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp sugar, 1 Tbsp oligosaccharide, 2 Tbsp sesame oil, 2 Tbsp cooking wine, 1 Tbsp sesame seeds, a pinch of black pepper, 100ml pineapple juice, and 2 Tbsp minced garlic. Mix everything thoroughly to create a delicious marinade. The pineapple juice helps tenderize the meat and adds a subtle sweetness.
Step 3
Add the prepared beef to the marinade and gently mix by hand to coat evenly. Let it marinate for about 30 minutes to allow the flavors to penetrate the meat. While the beef marinates, prepare the vegetables. Slice the carrot into 5cm lengths and about 1.5cm thickness. Thinly slice the onion and cut the scallions diagonally into large pieces. For the oyster mushrooms, remove the tough ends and tear them into bite-sized pieces.
Step 4
Heat a pan over medium-high heat. Add the marinated beef and stir-fry, breaking it apart with chopsticks or a spatula to prevent clumping.
Step 5
Once the beef is partially cooked and starting to bubble, add the prepared carrots. Continue to stir-fry. Adding the carrots at this stage allows them to cook and release their sweetness into the sauce.
Step 6
When the carrots are about halfway cooked, add the sliced onions and stir-fry until they become translucent. The sweetness from the onions will meld with the beef, enhancing the overall flavor.
Step 7
As the onions turn translucent, add the torn oyster mushrooms to the pan. Cook until the mushrooms soften and shrink in size.
Step 8
Once the onions are fully translucent and the mushrooms have wilted, add the diagonally sliced scallions.
Step 9
Quickly stir everything together just until the scallions are slightly tender, then turn off the heat. Your delicious Mushroom Bulgogi is ready! You can sprinkle extra sesame seeds on top for garnish if desired. Enjoy this delightful dish with a bowl of warm rice.
