Main Ingredients- 1.5 handfuls of shelled cockle meat (approx. 150g)
- 1.5 bowls of warm rice
Sauce Ingredients- 2 Tbsp soy sauce
- 1 Tbsp gochugaru (Korean chili powder)
- 0.3 Tbsp minced garlic (approx. 1/3 tsp)
- 1 Tbsp plum extract (maesilcheong)
- 0.5 Tbsp sesame oil (approx. 1/2 tsp)
- 0.5 Tbsp sesame seeds (approx. 1/2 tsp)
- A little chopped green onion
- 2 Tbsp soy sauce
- 1 Tbsp gochugaru (Korean chili powder)
- 0.3 Tbsp minced garlic (approx. 1/3 tsp)
- 1 Tbsp plum extract (maesilcheong)
- 0.5 Tbsp sesame oil (approx. 1/2 tsp)
- 0.5 Tbsp sesame seeds (approx. 1/2 tsp)
- A little chopped green onion
Cooking Instructions
Step 1
Prepare the plump and chewy cockle meat. Boil the cockles beforehand, remove the shells, and use only the meat. When the cockles open their shells, they are fully cooked, so remove them immediately. If the shells don’t open easily, use the back of a spoon to pry them open and extract the cockle meat.
Step 2
Let’s make the delicious cockle bibimbap sauce. In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp gochugaru, 0.3 Tbsp minced garlic, 1 Tbsp sweet plum extract, 0.5 Tbsp savory sesame oil, and finally 0.5 Tbsp sesame seeds. Mix them well. You’ll have a perfectly spicy, sweet, and flavorful sauce.
Step 3
Add the prepared sauce to the cockle meat and gently mix. It’s important to mix gently so that the cockle meat doesn’t get mashed.
Step 4
Now it’s time to mix the sauced cockles with the rice. Use a rice paddle to gently mix the rice by drawing an ’11’ shape, which will help mix the rice grains without clumping them, keeping them fluffy. Be careful not to press down too hard, as this can make the rice mushy.
Step 5
Transfer the well-mixed cockle bibimbap to a nice serving bowl. Finally, sprinkle with finely chopped green onions and a touch more sesame seeds for a visually appealing cockle bibimbap! Enjoy your meal.
