This recipe offers a delightful variation from the usual, with the addition of Cheongyang chili peppers for a spicy and invigorating flavor that cuts through any richness. Main Ingredients- 2 medium potatoes
- 1 can Spam (200g)
- 1 medium onion
- 2 Cheongyang chili peppers
Cooking Instructions
Step 1
First, prepare all your ingredients. You’ll need 2 medium potatoes, 1 can of Spam, 1 medium onion, and 2 Cheongyang chili peppers. For seasoning, have 0.5 Tbsp of anchovy sauce, salt, and pepper ready.
Step 2
Peel and dice the potatoes and onion into roughly 1.5cm cubes. Dice the Spam into similar-sized cubes. Finely chop the Cheongyang chili peppers. If you prefer less heat, you can remove the seeds from the chili peppers.
Step 3
Place the diced potatoes in a bowl of cold water and let them soak for 10-15 minutes. This step helps remove excess starch, ensuring the potatoes cook up fluffy and don’t stick together during stir-frying.
Step 4
Heat a little cooking oil in a pan over medium-high heat. Add the diced Spam and stir-fry until it’s golden brown and slightly crispy. Spam releases its own fat, so you won’t need much added oil. Once browned, transfer the Spam to a separate plate and set aside.
Step 5
In the same pan (add a touch more oil if needed), add the drained diced potatoes and stir-fry over medium heat. Once the potatoes are about halfway cooked, add the diced onion and continue to stir-fry. Season with salt and pepper at this stage.
Step 6
When the potatoes become translucent and tender, and the onions are softened, return the pre-fried Spam to the pan. Stir everything together to combine the ingredients well.
Step 7
Finally, add the chopped Cheongyang chili peppers and stir-fry for just another minute or so. Avoid overcooking them to maintain their crisp texture and fresh flavor.
