  • 1/4 yellow bell pepper
  • 1/2 enoki mushroom
  • 8 perilla leaves
  • 1/8 carrot

  • 3 Tbsp soy sauce
  • 2 Tbsp sugar
  • 1 Tbsp mirin (rice wine)
  • 1 Tbsp plum extract
  • 1 Tbsp oligosaccharide
  • 2 Tbsp minced green onion
  • 1 Tbsp minced garlic
  • 2 Tbsp minced onion
  • 3 Tbsp glutinous rice flour
  • 1/2 Tbsp ginger powder
  • Pinch of black pepper
  • Pinch of sesame seeds
  • 1 pinch of salt

Cooking Instructions

Step 1

To make the cooking process smoother, prepare all ingredients by washing and chopping them before you begin. For the ground meat, pat it dry with paper towels to remove excess moisture.

Step 1

Step 2

In a mixing bowl, combine the ground pork and beef. Add minced garlic, minced green onion, minced onion, and glutinous rice flour. The glutinous rice flour will help bind the ingredients and create a tender texture.

Step 2

Step 3

Prepare the marinade for the meat. In a separate small bowl, whisk together 3 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp plum extract, 1 Tbsp oligosaccharide, 1/2 Tbsp ginger powder, a pinch of black pepper, a pinch of sesame seeds, and 1 pinch of salt until well combined.

Step 3

Step 4

Add about two-thirds of the prepared marinade to the ground meat mixture. Knead the meat vigorously for about 10 minutes until it becomes sticky and well-combined. Reserve the remaining marinade to brush on later, as adding too much at this stage can cause the rolls to burn during cooking.

Step 4

Step 5

Once the meat mixture is ready, prepare the vegetables that will go inside the rolls. Julienne the bell peppers and carrot into thin strips. Trim the roots off the enoki mushrooms.

Step 5

Step 6

Wash the perilla leaves thoroughly and trim off the stems. You can briefly steam or blanch them to make them more pliable and easier to roll. Cut each leaf in half to create manageable pieces.

Step 6

Step 7

Place a half perilla leaf flat. Arrange the julienned carrot, enoki mushroom, and bell pepper strips on top. Starting from one side, tightly roll the ingredients up, similar to making a small sushi roll.

Step 7

Step 8

Continue this process, rolling up the vegetables with perilla leaves until you have the desired number of rolls. Using different colored bell peppers will make the final dish visually appealing.

Step 8

Step 9

Take the prepared vegetable rolls and wrap them with the seasoned ground meat mixture. Flatten a portion of the meat mixture into a thin sheet and carefully wrap it around each vegetable roll, ensuring there are no gaps and the meat covers the entire surface.

Step 9

Step 10

Heat a lightly oiled pan over medium heat. Place the meat-wrapped rolls in the pan and sear them on all sides until golden brown. This initial searing helps to lock in the juices and develop flavor.

Step 10

Step 11

Using a spatula or tongs, carefully turn the rolls to ensure all sides are evenly browned and cooked.

Step 11

Step 12

Once the exterior is nicely browned, reduce the heat to low, cover the pan with a lid, and let the rolls cook through. This steaming process ensures the meat is cooked thoroughly and remains moist.

Step 12

Step 13

After the rolls are fully cooked, brush the reserved marinade evenly over the exterior. You can briefly pan-fry them again for a minute or two to caramelize the sauce, adding an extra layer of delicious flavor.

Step 13

Step 14

Slice the cooked meat and vegetable rolls into bite-sized pieces and arrange them attractively on a serving plate. Garnish the center for a beautiful presentation. Consider using toppings like sesame seeds, pine nuts, shredded red chili, or thinly sliced dates for a festive touch.
