[346kcal] How to Make a Crispy Red Cabbage La-Pe Salad for Weight Loss (with Chicken Breast)
Introducing a healthy and delicious low-calorie red cabbage la-pe salad recipe, perfect for your weight loss journey, at just 346kcal! Red cabbage, unlike its white counterpart, is rich in ‘anthocyanins,’ powerful antioxidants known for their benefits in cancer prevention, inflammation reduction, allergy relief, vision improvement, heart health, and weight management. If you find red cabbage difficult to incorporate into your diet, try making it into a ‘la-pe’! La-pe, made by thinly shredding the cabbage, retains its delightful crunch and abundant natural juices, making it a perfect accompaniment to any dish. Paired with chicken breast and basil pesto, this salad becomes a complete and satisfying meal for your diet. Let’s start making this easy and delicious red cabbage la-pe salad right away!
Main Ingredients- 100g Red Cabbage
- 100g Smoked Chicken Breast
- 3 Cherry Tomatoes
- 1 Tbsp Stevia (sugar substitute)
- 2 Tbsp Lemon Juice
- 2 Tbsp Mustard Sauce
- 1 Tbsp Olive Oil
- 1 Tbsp Basil Pesto
Cooking Instructions
Step 1
First, remove any bruised or wilted outer leaves from the red cabbage and trim the hard base. Cut the cabbage in half, then thinly shred it into fine strips, or slightly thicker ones depending on your desired texture. For a crispier bite, shredding it not too thinly and lengthwise is recommended. The thickness and length of your shreds will affect the salad’s texture, so adjust according to your preference.
Step 2
Place the shredded red cabbage in a bowl of cold water and let it soak for about 10 minutes. This step helps to effectively remove any residual pesticides that might be present on the cabbage. While it’s often believed that cabbage has high pesticide residues and is difficult to clean, this isn’t entirely true. Cabbage grows from the inside out, meaning the outer leaves are more exposed to pesticides, while the inner leaves are naturally protected. Therefore, removing the outer couple of leaves and soaking the cabbage in water should alleviate any concerns about pesticide residue. You can now enjoy your cabbage without worry!
Step 3
Rinse the soaked red cabbage thoroughly under running water and drain it well using a colander. Transfer the drained cabbage to a large bowl and sprinkle evenly with salt. Let it sit for about 10 minutes to wilt and release its moisture. (Although not pictured) During this time, cut the smoked chicken breast into bite-sized pieces with scissors, and wash the cherry tomatoes, removing their stems. Feel free to add any other fruits or vegetables you have on hand to enrich your salad. After 10 minutes, you’ll see water released from the cabbage. Squeeze out this excess water firmly by hand.
Step 4
Now, let’s prepare the dressing to add sweetness to your red cabbage la-pe! Instead of regular sugar, we’re using ‘Stevia’ for a healthier, low-calorie sweetness. Stevia, also known as ‘sugar leaf,’ is a herb that contains a compound called ‘stevioside’ in its leaves and stems. This compound is 200-300 times sweeter than sugar. To balance any potential bitterness from stevia, it’s often combined with ‘Erythritol,’ which is a sugar alcohol that provides a rich sweetness without adding any calories (0kcal) as it’s not absorbed by the body.
Step 5
In the bowl, add the fresh lemon juice for a zesty kick, the smooth mustard sauce, and olive oil for added flavor. Since olive oil is relatively high in calories, use it in moderation. Now, combine all the prepared ingredients and gently toss them together. Your delicious and healthy red cabbage la-pe salad is ready!
