Creamy Fresh Potato Porridge

While potato rice or potato soup are common, potato porridge might seem unusual. However, this porridge offers a satisfying fullness thanks to the potatoes, and its smooth texture makes it incredibly easy to eat and delicious. I truly enjoyed this unique porridge.
Ingredients- 3 medium potatoes
- 1 cup glutinous rice (sweet rice)
- 1 cup regular rice
- 1 Tbsp soy sauce for soup (Guk-ganjang)
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, thoroughly wash the potatoes. Then, peel them and cut them into bite-sized pieces. I like to cut them into about 1.5cm cubes to retain a slight texture, similar to the size used in curry. After cutting, soak the potato pieces in cold water for a short while to wash off excess starch, then drain them and set aside.
Step 2
Rinse the rice and soak it in water for about 30 minutes. Once soaked, drain the water thoroughly. I used a combination of 1 cup of regular rice and 1 cup of glutinous rice for a total of 2 cups. You can use only regular rice if you prefer.
Step 3
Heat a small amount of sesame oil in a pot over medium-low heat. Add the diced potatoes and sauté them lightly for a minute or two. This step helps to bring out the flavor of the potatoes.
Step 4
Add the soaked and drained rice to the pot with the potatoes. Stir-fry the rice and potatoes together until the rice grains become slightly translucent, about 2-3 minutes. This toasting process helps prevent the rice from clumping together in the porridge.
Step 5
Pour in water or broth. A good ratio is about 4 to 5 cups of liquid for every cup of rice. Today, I added a piece of dried kelp for extra flavor, and removed it once the water began to boil. (If using a small pot, you might need to add more water later as it cooks down.) Bring the mixture to a boil, then reduce the heat to low, cover, and simmer until the rice is completely broken down and the porridge reaches your desired consistency. Once the rice is fully cooked and the porridge is creamy, stir in 1 tablespoon of soy sauce for soup and cook for another minute. Your delicious potato porridge is ready!
