This is a simple yet deeply flavorful stew I made with the ingredients I had on hand. It’s so good, one bowl of rice will disappear in no time! It’s a perfect, comforting dish on its own.

Main Ingredients

  • 2 medium Yellow Croaker (Gulbi), cleaned
  • 100g Korean radish (mu)
  • 2 cups (400ml) Anchovy broth
  • A little bit of green onion (about 1/4 stalk)
  • A little bit of crown daisy (shunggaeng), to taste

Seasoning Ingredients

  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp Gochujang (Korean chili paste)
  • 1/2 Tbsp Soy sauce
  • 1 clove Garlic, minced (large clove)
  • A pinch of ginger, minced

Cooking Instructions

Step 1

Prepare the Yellow Croakers (Gulbi) by rinsing them thoroughly under running water. Trim the fins and tail, and if necessary, remove the innards. Rinsing them in rice water can help further reduce any fishy odor.

Peel the Korean radish and slice it into thin, bite-sized pieces (about 0.3cm thick). Finely chop the green onion. Mince the garlic and ginger. (Ginger has a strong flavor, so use a very small amount or omit if preferred.)

In a small bowl, combine the gochugaru (chili flakes), gochujang (chili paste), soy sauce, minced garlic, and ginger. Add 2-3 tablespoons of the anchovy broth and mix well until the seasoning paste is smooth and lump-free. Mixing the seasonings beforehand ensures they distribute evenly in the stew, enhancing the flavor.

Pour the 2 cups (400ml) of anchovy broth into a pot. Add the sliced Korean radish and stir in the prepared seasoning mixture. Once the seasonings are well dissolved in the broth, add the prepared Yellow Croakers (Gulbi) and bring to a boil over high heat.

Once the stew comes to a boil, reduce the heat to medium and simmer for about 5-7 minutes, or until the fish and radish are tender. When the broth has a clear and refreshing flavor, add the chopped green onions and crown daisy generously. Let it simmer for another moment until the vegetables are slightly wilted, then remove from heat and serve immediately!
