Ingredients- 205g Ripe Bananas
- 124g Rolled Oats
- 20g Stevia
- 10g Protein Powder
Cooking Instructions
Step 1
Start with very ripe bananas – the ones with black spots are perfect as they’re naturally sweeter and form a great base for your cookies.
Step 2
Place the ripe bananas in a bowl and mash them thoroughly using a fork or a potato masher. It’s okay to leave a few small lumps for texture.
Step 3
Add rolled oats, aiming for a weight that’s about 40% of the banana’s weight (e.g., if you have 200g of banana, use 80g of oats). Oats add a wonderful texture and help make the cookies more filling.
Step 4
Finely chop or crush your nuts. A mix of almonds and walnuts works well. Aim for about 12% of the banana’s weight for almonds and another 12% for walnuts to add a lovely nutty flavor and healthy fats. (e.g., for 200g banana, use 24g almonds and 24g walnuts).
Step 5
Measure out your stevia, about 15% of the banana’s weight. Stevia is a great natural sweetener that allows you to reduce sugar and calories while still achieving a pleasant sweetness. (e.g., for 200g banana, use 30g stevia).
Step 6
Add your protein powder, aiming for about 5% of the banana’s weight. This boosts the protein content, making the cookies a more substantial snack. (e.g., for 200g banana, use 10g protein powder).
Step 7
1. In a large bowl, combine the rolled oats, chopped nuts, stevia, and protein powder. Give it a quick mix. 2. Pour the mashed bananas into the bowl with the dry ingredients. 3. Using a spatula or wooden spoon, mix everything together until well combined and a dough forms. 4. Cover the bowl and let the mixture rest at room temperature for 20 minutes. This allows the oats to absorb moisture and soften, resulting in chewier cookies. (While the dough rests, preheat your oven to 190°C or 375°F).
Step 8
Scoop out portions of about 10g each and place them on a baking sheet lined with parchment paper, leaving some space between them. Gently flatten each cookie slightly. You can top them with a few extra chopped nuts for decoration.

Bake in the preheated oven at 190°C (375°F) for 20 minutes, or until the tops start to turn golden brown.
Step 10
Carefully remove the cookies from the oven using a spatula and flip them over. Bake for an additional 12 minutes to ensure both sides are nicely browned and crispy.
