I made this radish greens and soybean paste stew for dinner. It’s incredibly savory and satisfying!
Main Ingredients- 1 handful of boiled radish greens (rinsed thoroughly)
- A little green onion (finely chopped)
- 1 ‘Haemul Han-al’ broth cube (or anchovy-kelp broth)
- A pinch of salt (for blanching)
- 1 cup water (200ml)
Seasoning Ingredients- 1 Tbsp Korean soybean paste (adjust if using homemade)
- 0.5 Tbsp minced garlic
- A little perilla oil (sesame oil alternative)
- A little sesame seeds (for garnish)

Cooking Instructions
Step 1
First, prepare the boiled radish greens. Rinse them thoroughly under running water several times to remove any dirt or debris. Bring a pot of water to a boil, add half a tablespoon of salt, and blanch the radish greens for about 1-2 minutes. Quickly rinse them under cold water and squeeze out excess moisture. This step helps reduce any bitterness and makes the greens more tender.
Step 2
Once the excess water is squeezed out, cut the radish greens into bite-sized pieces, about 3-4 cm long. Cutting them too long can make them difficult to manage while cooking.
Step 3
Transfer the cut radish greens to a large bowl. Add 1 tablespoon of soybean paste, 0.5 tablespoon of minced garlic, and the finely chopped green onion. Gently mix everything together with your hands, ensuring the seasonings are evenly distributed throughout the greens. Taste and adjust the soybean paste if needed, as saltiness can vary.
Step 4
Place the seasoned radish greens into a pot and pour in 1 cup (200ml) of water. Cover the pot with a lid and begin cooking over medium-low heat. Once the stew starts boiling, add the ‘Haemul Han-al’ broth cube (or your prepared broth) and reduce the heat to low. Let it simmer gently, covered, for about 4-5 minutes. This allows the flavors to meld and the radish greens to absorb the seasoning.
Step 5
When the broth has reduced to a desirable consistency and the ingredients are well-cooked, turn off the heat. Be careful not to let it reduce too much, as it can become too salty. Aim for a slightly soupy consistency.
Step 6
After turning off the heat, drizzle in a little perilla oil and sprinkle with sesame seeds for garnish. The nutty aroma of the perilla oil and the crunch of the sesame seeds will greatly enhance the flavor. Gently mix to combine for a delicious finish.
