Ingredients

  • 3 Ripe Persimmons (seeds and skin removed)
  • 1 Tbsp Sugar (adjust to taste)
  • 1/2 Paper Cup Milk (approx. 100ml)
  • 1/2 Paper Cup Heavy Cream (approx. 100ml)
  • 2 Gelatin Sheets
  • A little Apple Mint for garnish (optional)

Cooking Instructions

First, prepare the gelatin. Soak 2 sheets of gelatin in cold water for about 10 minutes until softened. This will help the pudding set properly.

Wash the ripe persimmons thoroughly. Remove the stems and peel them. It’s important to remove all seeds to ensure a smooth pudding texture. Place the pitted and peeled persimmons into a blender or mixer and blend until smooth, creating a persimmon puree. Reserve about 2/3 of the puree for the pudding base, and set aside the remaining 1/3 for topping.

In a small saucepan, combine 1/2 paper cup of milk, 1/2 paper cup of heavy cream, and 1 Tbsp of sugar. Heat gently over low heat, stirring until the sugar dissolves. Add 2/3 of the prepared persimmon puree and the squeezed, softened gelatin sheets. Stir well until the gelatin is completely dissolved. Simmer gently over low heat without letting it boil vigorously, as this can weaken the gelatin’s setting power. Once it’s just heated through, remove from heat immediately.

Carefully pour the persimmon pudding mixture into individual serving glasses or pudding cups. Refrigerate for at least 2-3 hours, or until the pudding is completely set and firm. The longer it chills, the smoother and more jiggly it will become.
