How to Make Delicious Bibim Guksu Sauce: A Simple and Recommended Homemade Meal
One of the quickest meals I whip up is Bibim Guksu! It was a dish my husband and I often enjoyed when it was just the two of us, but since our children can’t handle spicy food, I don’t make it as often for family meals. The other day, my kids finished their dinner early, and I noticed we had bought salad vegetables that needed to be eaten soon. So, I decided to make a hearty Bibim Guksu packed with vegetables! Our family’s favorite is the Kimchi Bibim Guksu! Let’s get started with a simple recipe for the sauce. This dish is perfect for a quick, flavorful, and satisfying meal, combining the vibrant freshness of vegetables with a perfectly balanced spicy and sweet sauce.
Essential Ingredients- Somen noodles 2.5 bundles (approx. 250g)
- Salad vegetables 1 bowlful (rinsed and drained)
- Aged kimchi (or ripe kimchi) 1 ladleful (chopped into bite-sized pieces)
- Cucumber 1/2 (thinly julienned)
- 1 hard-boiled egg (halved for topping)
Golden Bibim Guksu Sauce- 1 Tbsp Gochugaru (Korean chili flakes)
- 3-4 Tbsp Gochujang (Korean chili paste, generously measured)
- 1 Tbsp Sugar
- 3-4 Tbsp Maesilcheong (Plum extract)
- 1 Tbsp Soy sauce
- 1 Tbsp Oligodang (Oligosaccharide syrup)
- 0.5 Tbsp Minced garlic
- 0.5 Tbsp Lemon juice
- 1 Tbsp Gochugaru (Korean chili flakes)
- 3-4 Tbsp Gochujang (Korean chili paste, generously measured)
- 1 Tbsp Sugar
- 3-4 Tbsp Maesilcheong (Plum extract)
- 1 Tbsp Soy sauce
- 1 Tbsp Oligodang (Oligosaccharide syrup)
- 0.5 Tbsp Minced garlic
- 0.5 Tbsp Lemon juice
Cooking Instructions
Step 1
First, lightly rinse the salad vegetables under cold water and ensure they are completely drained. You can use a colander or gently pat them dry with paper towels.
Step 2
We’ll prepare the kimchi topping to enhance the flavor of the Bibim Guksu. Using aged or ripe kimchi will yield the best results.
Step 3
Chop the prepared aged kimchi (or ripe kimchi) into bite-sized pieces. Place the kimchi in a bowl, add 0.5 Tbsp sugar and 0.5 Tbsp sesame oil, and mix well. Let it sit for a moment to let the flavors meld.
Step 4
Boil one egg until hard-boiled for the topping. Fill a pot with enough water to cover the egg, add a pinch of salt and 1 tsp of vinegar to make peeling easier. Once the water boils, reduce the heat to medium, and gently rotate the egg occasionally to ensure the yolk stays centered. Boil for 9 to 10 minutes for a fully cooked egg. Immediately cool the boiled egg in cold water, peel, and cut in half.
Step 5
While the egg is boiling, let’s make the delicious Bibim Guksu sauce. In a bowl, combine 1 Tbsp gochugaru, 3-4 Tbsp gochujang (measure generously), 1 Tbsp sugar, 3-4 Tbsp maesilcheong, 1 Tbsp soy sauce, 1 Tbsp oligodang, 0.5 Tbsp minced garlic, and 0.5 Tbsp lemon juice. Mix everything thoroughly. You can adjust the sweetness and tartness using the maesilcheong. If the sauce seems too thin, add a little more gochugaru to thicken it.
Step 6
Now it’s time to cook the somen noodles. Bring a generous pot of water to a boil, adding 1 tsp of salt. This helps the noodles become more firm and springy.
Step 7
While the water is boiling, thinly julienne half an cucumber and have your halved hard-boiled egg ready.
Step 8
Once the water is vigorously boiling, add 2.5 bundles of somen noodles (about the size of a 500-won coin per bundle). Carefully place the noodles into the boiling water to prevent them from clumping.
Step 9
As the noodles boil and the water starts to rise, add about a cup of cold water to regulate the temperature. Repeat this process a couple of times to achieve chewier noodles. Stir the noodles occasionally to prevent them from sticking together.
Step 10
When the noodles are cooked to your liking (usually 3-5 minutes), immediately rinse them under cold running water. Rinsing removes excess starch, ensuring the noodles are firm and won’t become mushy.
Step 11
Add the drained somen noodles to the prepared Bibim Guksu sauce, along with the salad vegetables.

Now, it’s time to mix everything together and make it delicious! After thoroughly draining the somen noodles, mix them well with the sauce and vegetables until everything is evenly coated. Doesn’t it look appetizing already?

Once the noodles and vegetables are well combined with the sauce, transfer them to a serving bowl.

Finally, artfully arrange the prepared kimchi topping, julienned cucumber, and the halved hard-boiled egg on top.
