While the water is coming to a boil, wash and prepare the potato. Cut it into quarters, and then slice it into approximately 7mm thick pieces. Be careful not to slice them too thinly, or they might break down too much.

Peel the onion and slice it vertically into moderate-sized pieces, as shown in the image. The sweetness from the onion will add a wonderful depth to the soup’s flavor.

Finely chop the green onion. Reserve about half of the chopped green onion for garnishing later.
