When their outer and inner skins are removed and they are lightly stir-fried, their slightly bitter taste diminishes, replaced by a pleasant nuttiness. This makes them an excellent snack, perfect for enjoying with drinks. We’re presenting a ‘Ginkgo Nut and Nut Medley Stir-fry’ that elevates both texture and nutrition by adding savory mixed nuts. Coated in a sweet and savory sauce made with soy sauce and oligosaccharide, this dish is a captivating side dish that pairs wonderfully with rice or as a delightful accompaniment to your favorite beverage.
Main Ingredients- 70g ginkgo nuts (shelled)
- 30g mixed nuts (such as walnuts, almonds, cashews, or your preference)
- 2 Tbsp cooking oil
Sweet and Savory Sauce- 7 Tbsp water
- 4 Tbsp soy sauce
- 2 Tbsp oligosaccharide
- 7 Tbsp water
- 4 Tbsp soy sauce
- 2 Tbsp oligosaccharide
Cooking Instructions
Step 1
Prepare the ginkgo nuts. If they are in their shells, blanch them in boiling water for about 2-3 minutes. Carefully, using tools like chopsticks, roll them around to help remove the shells. This process makes peeling much easier. Ensure you have only the ginkgo nut kernels, with both the outer and inner skins completely removed. (If you are using pre-shelled ginkgo nuts, you can skip this step.)
Step 2
Prepare the mixed nuts that will be braised together. Using a blend of your favorite nuts like walnuts, almonds, and cashews will create a richer flavor and texture. If you are using raw, unroasted nuts, lightly toast them in a dry pan or microwave for about 30 seconds to enhance their nutty aroma and flavor.
Step 3
Heat 2 tablespoons of cooking oil in a wide pan over medium-low heat. Add the prepared ginkgo nuts and stir-fry for 1-2 minutes, ensuring they don’t burn. Stirring constantly helps to remove any unpleasant bitterness from the ginkgo nuts and brings out their nutty fragrance.
Step 4
Add the prepared mixed nuts to the same pan with the ginkgo nuts. Continue to stir-fry them together for just about 30 seconds to 1 minute. Be careful not to overcook the nuts, as they can burn easily. A light stir-fry will enhance their natural roasted flavor.
Step 5
Now, pour all the sweet and savory sauce ingredients into the pan: 7 tablespoons of water, 4 tablespoons of soy sauce, and 2 tablespoons of oligosaccharide. Maintain a medium heat and stir the ingredients to ensure the sauce evenly coats the ginkgo nuts and nuts. Continue to simmer until the sauce thickens and becomes glossy. This indicates the flavors have melded beautifully.
Step 6
