Ingredients- 1 can Canned Saury
- 1/4 head Kimchi (preferably aged)
- 1/2 Tbsp Minced Garlic
- 1 Onion
- 1 Green Onion (scallion)
- 1 Chili Pepper (e.g., jalapeño or regular)
- 100ml Water
Seasoning- 1/2 Tbsp Salt (to taste)
- 1/2 Tbsp Salt (to taste)
Cooking Instructions
Step 1
The key to delicious kimchi stew is good kimchi! Using aged or sour kimchi will add a deeper flavor. Combine the kimchi and the liquid from the canned saury in a pot. The kimchi brine will mix with the saury liquid, enhancing the savory notes.
Step 2
Add 1/2 tablespoon of minced garlic to the pot with the kimchi and liquid. Garlic helps to neutralize any slight fishiness from the kimchi and adds a refreshing depth to the broth. Turn on the heat and bring it to a boil.
Step 3
Once the broth starts boiling, carefully add the saury pieces from the can into the pot. Try to place them gently to avoid breaking them apart. Let the stew come to a boil again after adding the saury.
Step 4
After the kimchi and saury have cooked a bit, it’s time to add the vegetables. Add the chopped onion, sliced green onion, and chopped chili pepper to the pot. Pour in 100ml of water to adjust the broth volume and help the ingredients cook through. Once all ingredients are simmering together, your delicious saury kimchi stew is almost ready.
Step 5
Finally, let the stew simmer until the broth thickens slightly. This step allows the flavors of all the ingredients to meld deeply into the broth, creating a richer taste. Season with salt to your preference, and you’ll have a wonderfully satisfying saury kimchi stew ready in just 10 minutes!
