Main Ingredients

  • Minari (Water Parsley) 20g: Wash thoroughly under running water and cut into bite-sized pieces (about 3-4cm).
  • Apple 1 (approx. 150g): Peel and cut into thick julienne strips. (To prevent browning, toss immediately with the dressing or lightly squeeze lemon juice over it.)

Sweet and Sour Dressing

  • Gochugaru (Korean Chili Flakes) 2 Tbsp: Adds spiciness and color.
  • Lemon Juice 1 Tbsp: Enhances the refreshing flavor and maintains crispness.
  • Plum Extract 1 Tbsp: Adds a subtle sweetness and deep flavor.
  • Sugar or Apple Extract 1 Tbsp: Adjust sweetness to your preference. Using apple extract can further enhance the apple flavor.
  • Sesame Oil 1 Tbsp: Adds a nutty aroma, completing the dish’s flavor profile.
  • Salted Shrimp (Saeujeot) 1 Tbsp: Used instead of fish sauce in the Baek Jong-won recipe for added umami. Mince finely before adding.
  • Sesame Seeds (toasted) 1 tsp: Sprinkle on top at the end for a nutty finish.

Cooking Instructions

Step 1

First, prepare the main ingredient, 20g of minari. Wash it thoroughly under clean running water to remove any dirt or debris, then cut it into bite-sized pieces of about 3-4 cm. Drain the water and set aside. This ensures the dish is clean and hygienic.

Step 1

Step 2

Next, prepare 1 apple (about 150g). Peel the apple completely, then cut it into thick julienne strips using a knife or mandoline. Apples can brown quickly after cutting, so either toss them immediately with the dressing in the next step, or if you need to set them aside briefly, lightly squeeze some lemon juice over them to prevent browning.

Step 2

Step 3

Now, it’s time to make the delicious dressing for the apple and minari salad. In a wide bowl, combine 2 tablespoons of gochugaru (Korean chili flakes), 1 tablespoon of lemon juice for added freshness, and 1 tablespoon of plum extract for a sweet and flavorful touch. While the original Baek Jong-won recipe uses fish sauce, we’re using 1 tablespoon of finely minced salted shrimp (saeujeot) for an extra boost of umami. Finally, add 1 tablespoon of sesame oil for a nutty aroma and 1 teaspoon of toasted sesame seeds. Whisk everything together thoroughly until well combined. Adding 1 tablespoon of apple extract instead of sugar will further enhance the apple’s natural flavor.

Step 3

Step 4

Add the julienned apples to the prepared dressing and gently toss them. This allows the apples to absorb the seasoning evenly, creating a beautiful color, while maintaining their crisp texture.

Step 4

Step 5

Once the apples are somewhat coated with the dressing, add the prepared minari. Gently toss using your fingertips. Avoid kneading too vigorously, as this can make the minari mushy. It’s important to mix lightly but thoroughly, ensuring the seasoning coats the minari evenly. This method preserves the fresh, crisp texture of the minari.

Step 5

Step 6

Voilà! Your crisp and refreshing Apple Minari Salad is complete. Served alongside perfectly grilled beef brisket (woosamgyeop) on a plate, this dish looks so elegant that it’s perfect for entertaining guests. Its visual appeal and delicious taste are sure to satisfy everyone.

Step 6

Step 7

This refreshing apple and minari salad also makes an excellent accompaniment to drinks. Its clean, zesty flavor pairs wonderfully with richer, fried appetizers, so be sure to try it for your next gathering.

Step 7

Step 8

Finally, this dish is also a fantastic side for rice! Place it over your rice and mix, or enjoy it with other side dishes and wraps, and your everyday meal will instantly feel like a luxurious feast. The amazing synergy between apples and minari will make your dining table even more abundant. You must try making it!
