Main Ingredients

  • 300g fresh burdock root
  • 3 Tbsp vinegar (measured with a rice spoon)

Seasoning Ingredients

  • 3 Tbsp soy sauce for braising (measured with a rice spoon)
  • 3 Tbsp brown sugar
  • 2 Tbsp corn syrup (oligosaccharide)
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

Prepare 300g of fresh burdock root. Look for burdock root with soil still attached, as it’s generally fresher.

Wash the burdock root thoroughly under running water, then peel off the skin using a peeler. Cut it into approximately 5cm lengths, then slice thinly into strips.

Soak the cut burdock root in water with 3 Tbsp of vinegar for about 3-5 minutes. This process helps to remove any bitterness and keeps the burdock root looking white.

Rinse the burdock root a couple of times after soaking in the vinegar water and drain. Place the burdock root in a pot and add enough water to cover it. Add 3 Tbsp of soy sauce for braising and 3 Tbsp of brown sugar. Bring to a boil over high heat, then reduce to medium-low heat and simmer.

The burdock root after simmering for about 10 minutes. It will start to take on a delicious color as the soy sauce and sugar meld.

As the liquid reduces, the burdock root will turn a lovely brown color. Taste and add more soy sauce or sugar if needed. Finally, over low heat, stir in 2 Tbsp of corn syrup, ensuring it coats the burdock root evenly. Cook until the liquid has almost evaporated and the burdock root is tender and slightly chewy. Your delicious braised burdock root is complete!
