  • Store-bought potato hand-pulled noodle dough 300g
  • Potatoes 200g (about 1 medium)
  • Carrot 1/4
  • Onion 1/2
  • Zucchini 1/3
  • Scallion (green part) 1 stalk (approx. 20cm)

Cooking Instructions

Step 1

First, prepare your vegetables. Thinly julienne the carrot, onion, and zucchini. Slice the green part of the scallion diagonally into about 20cm lengths. Having your vegetables prepped like this will make the cooking process much smoother.

Peel the potatoes and slice them into half-moons or bite-sized pieces. Soak the sliced potatoes in cold water for about 10 minutes to remove excess starch. This step helps to keep the broth clear and prevents the noodle dough pieces from sticking together. After soaking, drain them in a colander.

In a deep pot, add 1.3L of water and 3 anchovy-kelp coin broth cubes. Using coin broth is a convenient way to achieve a rich, clean umami flavor without needing to prepare broth from scratch. Once the water comes to a boil, let it simmer briefly to allow the broth to infuse.

Add the prepared potatoes and carrots to the boiling broth and cook. These are denser vegetables, so adding them first allows their sweetness to infuse into the broth and ensures they cook evenly with the other ingredients. Simmer until the potatoes are halfway cooked.

Once the potatoes and carrots are partially cooked, add the remaining vegetables (onion, zucchini, scallion) and the store-bought hand-pulled noodle dough. Stir in 2 tablespoons of fish sauce for added depth of flavor. Gently stir occasionally to prevent the noodle dough from clumping. Adjust the seasoning with soy sauce for soup or salt to your preference. Once the noodle dough is chewy and all the vegetables are tender, your delicious potato hand-pulled noodle soup is ready!
