Experience a new level of pumpkin pancakes, not sliced but blended into a wonderfully soft and moist texture. These old pumpkin pancakes are naturally sweet and melt-in-your-mouth, making them perfect for all ages as a simple meal or a healthy snack.

Cooking Instructions
Step 1
Prepare 500g of peeled old pumpkin by cutting it into small pieces and placing it on a plate. Cook it for about 8-10 minutes using an electric cooktop until it softens nicely. Steaming or microwaving are also good options.
Step 2
Transfer the cooked pumpkin to a blender. Add about 70ml of water and blend until smooth. If you have a lot of pumpkin or prefer a very smooth consistency, you can divide the water into two portions (approx. 70ml each) and blend in two stages for a total of about 140ml. A mortar and pestle can also be used if a blender is unavailable.
Step 3
Pour the blended old pumpkin puree into a large bowl. The batter consistency can vary depending on the flour used and the moisture content of the pumpkin. It’s important to check the batter’s thickness and adjust the amount of flour and starch accordingly to avoid making it too watery.
Step 4
Now, let’s make the batter. To the pumpkin puree in the bowl, add 15 Tbsp of potato starch and 5 Tbsp of all-purpose flour. (A ratio of 3:1 for starch to flour is recommended.) Finally, add 2 pinches of salt and stir everything together until well combined.
Step 5
The batter is now smooth and has a lovely soft yellow color. It’s ready to be cooked into delicious pumpkin pancakes on the griddle. By scooping the batter with a spoon, you can form round pancakes.
Step 6
Heat a frying pan over medium heat and add a generous swirl of cooking oil. Ladle about a tablespoon of batter for each pancake onto the hot pan. Since the batter is quite fluid, making smaller, flat pancakes will help maintain their shape and ensure even cooking.
Step 7
Because the pumpkin is already cooked, these pancakes cook very quickly. Once one side is golden brown, flip it over and cook the other side until equally golden. Remove from heat once both sides are nicely colored. Be careful not to overcook, as they can become tough.
