King Oyster Mushroom Stir-Fry- 100g King Oyster Mushrooms (torn or sliced into bite-sized pieces)
- 1/2 Onion (thinly sliced)
- 2 Korean Green Chili Peppers (finely chopped)
- 2 Tbsp Oyster Sauce
- 4 Tbsp Anchovy Broth (or water if unavailable)
- A little Cooking Oil (or Canola Oil)
- A pinch of Sesame Seeds
- A little Sesame Oil
- 1/2 Tbsp Minced Garlic
Shrimp Mushroom Stir-Fry- 3 Shrimp Mushrooms (sliced into bite-sized pieces)
- 1/2 Onion (thinly sliced)
- 2 Korean Green Chili Peppers (finely chopped)
- A little Carrot (thinly sliced)
- 2 Tbsp Oyster Sauce
- 4 Tbsp Anchovy Broth (or water if unavailable)
- A little Cooking Oil (or Canola Oil)
- A pinch of Sesame Seeds
- A little Sesame Oil
- 1/2 Tbsp Minced Garlic
Enoki Mushroom Stir-Fry- 1 Enoki Mushroom (trim the base and separate strands)
- 1/2 Onion (thinly sliced)
- 2 Korean Green Chili Peppers (finely chopped)
- A little Carrot (thinly sliced)
- 2 Tbsp Oyster Sauce
- A little Cooking Oil (or Canola Oil)
- A pinch of Sesame Seeds
- A little Sesame Oil
- 1/2 Tbsp Minced Garlic
- 3 Shrimp Mushrooms (sliced into bite-sized pieces)
- 1/2 Onion (thinly sliced)
- 2 Korean Green Chili Peppers (finely chopped)
- A little Carrot (thinly sliced)

Enoki Mushroom Stir-Fry- 1 Enoki Mushroom (trim the base and separate strands)
- 1/2 Onion (thinly sliced)

Cooking Instructions
Step 1
1. King Oyster Mushroom Stir-Fry: First, prepare the King Oyster Mushrooms by trimming the base and tearing or slicing them into bite-sized pieces. Thinly slice the onion and finely chop the Korean green chili peppers. If you prefer less spice, feel free to omit or adjust the amount of chili peppers.
Step 2
Heat a generous amount of cooking oil (or canola oil) in a pan. Add the minced garlic and stir-fry over low heat until fragrant. Be careful not to burn the garlic.
Step 3
Add the prepared King Oyster Mushrooms and stir-fry. Then, add 4 Tbsp of anchovy broth (or water) and 2 Tbsp of oyster sauce. Stir until the sauce thickens slightly; this will enhance the flavor.
Step 4
Once the mushrooms are partially cooked, add the sliced onion and chopped green chili peppers, and stir-fry together. When the onions become translucent, turn off the heat. Finish by drizzling a little sesame oil and sprinkling sesame seeds for a nutty aroma. Your delicious King Oyster Mushroom Stir-Fry is ready!
Step 5
2. Shrimp Mushroom Stir-Fry: Slice the Shrimp Mushrooms into about 2cm thick pieces. Thinly slice the onion and carrot. Finely chop the Korean green chili peppers. Scoring the mushrooms lightly before slicing can help them absorb the sauce better and taste more delicious.
Step 6
Heat cooking oil (or canola oil) and minced garlic in a pan over medium-low heat until fragrant. Then, add the sliced Shrimp Mushrooms and carrots and stir-fry them together. Continue to stir-fry until the mushrooms release their moisture.
Step 7
When the mushrooms and carrots are partially cooked, add 2 Tbsp of oyster sauce, 4 Tbsp of anchovy broth (or water), the sliced onion, and chopped green chili peppers. Stir-fry quickly over high heat. Cooking over high heat helps evaporate excess moisture, keeping the mushrooms crisp. Finish by drizzling with sesame oil and sprinkling with sesame seeds.
Step 8
3. Enoki Mushroom Stir-Fry: Trim the base of the Enoki mushrooms and carefully separate them into individual strands. Finely chop the green chili peppers and mince the garlic. (If you wish to add onion and carrot, slice them thinly.)
Step 9
Pour cooking oil (or canola oil) into a pan and sauté the minced garlic until fragrant. Add the separated Enoki mushrooms and about 2 Tbsp of anchovy broth (or water) and stir-fry quickly. Enoki mushrooms cook very fast, so avoid overcooking.
Step 10
Once the Enoki mushrooms are slightly wilted, add 2 Tbsp of oyster sauce and the chopped green chili peppers. Stir-fry rapidly over high heat. (If you added onion or carrot, stir-fry them at this stage.) Turn off the heat, then drizzle with a little sesame oil and sprinkle with sesame seeds for a nutty finish. Your crispy and delicious Enoki Mushroom Stir-Fry is complete!
