Key Ingredients- 1/4 head of fresh kimchi (cut into bite-sized pieces)
- 1 can (85g) tuna (drained)
- 1/4 onion (thinly sliced)
- 1/2 green onion (sliced diagonally)
- 1 Korean chili pepper (sliced diagonally, adjust for spice preference)
- 1/2 Tbsp minced garlic
- 1 Tbsp fish sauce (or Korean soy sauce for soup)
- 0.5 Tbsp gochujang (Korean chili paste for depth)
- 1 Tbsp soy sauce
- Pinch of salt (to taste)
- 1 Tbsp sugar (to balance acidity and enhance umami!)
Cooking Instructions
Step 1
In a wide pot, combine the cut fresh kimchi with a pinch of salt and 1 tablespoon of sugar. Stir-fry over low heat until the kimchi becomes tender and slightly translucent. The sugar will soften the kimchi’s tanginess and add a subtle sweetness.

Once the kimchi is tender, add the sliced onion and stir-fry together. The natural sweetness of the onion will meld beautifully with the kimchi, creating a richer flavor profile.
