Cooking Instructions
Step 1
Prepare the ingredients that will make your stew rich and flavorful: 3 medium potatoes, 1 medium onion, 1 stalk of green onion, 1 can of canned ham, and 1 Cheongyang pepper for a touch of spiciness. For the seasoning sauce, you’ll need 1 Tbsp sugar, 2 Tbsp gochugaru, 4 Tbsp soy sauce, 1 Tbsp minced garlic, 0.3 Tbsp doenjang, and 1 Tbsp gochujang.
Step 2
Thickly slice the onion. This way, it will retain a pleasant texture when eaten and absorb the flavors well. Slice the green onion and Cheongyang pepper diagonally or chop them finely. If you prefer more heat, remove the seeds from the Cheongyang pepper or add it whole.
Step 3
Peel the potatoes and cut them into thick strips, similar in thickness to the onion slices. Avoid cutting them too thinly, as they might break apart during cooking. Aim for pieces that offer a satisfying bite.
Step 4
Open the can of ham, cut it into large pieces, and then finely mash it using a fork or the back of a knife. Mashing the ham will help its flavor meld beautifully into the broth, adding a deeper richness to the stew.
Step 5
In a large pot, combine the sliced potatoes, onions, and mashed ham. Add all the seasoning sauce ingredients (sugar, gochugaru, soy sauce, minced garlic, doenjang, and gochujang). Gently mix everything with your hands to ensure the seasoning is evenly distributed among the ingredients. This marinating step helps infuse the ingredients with flavor before cooking.
Step 6
Pour 2 cups (approximately 400ml) of water into the pot with the seasoned ingredients. Cover the pot and bring it to a simmer over medium heat. Cook for 10 to 15 minutes, or until the potatoes are tender. It’s crucial to cook the potatoes until they are soft enough to be easily pierced with a fork. Stir occasionally to prevent sticking to the bottom of the pot.
Step 7
Once the potatoes are cooked and tender, add the chopped Cheongyang pepper and green onion to the pot. Simmer for a short while longer to allow their fresh aromas to meld into the stew. This ham jjajae, made without meat but with the rich flavor of spam, is a truly delicious companion to a bowl of rice. You can enjoy a satisfying meal without any meat!
Step 8
Spam Jjajae (Ham Stew) is ready! Enjoy it hot with your favorite rice.
