Ingredients- 250g Potatoes (about 1-2 medium-sized)
- 1/2 stalk Green Onion
- 1 Korean Green Chili Pepper
- 2 Tbsp Potato Starch
- 50ml Water (for starch mixture)
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sesame Oil
- 1/2 tsp Salt
- 1 Tbsp Toasted Sesame Seeds
- Cooking Oil (generous amount)
Cooking Instructions
Step 1
First, wash the potatoes thoroughly. You can peel them or leave the skin on. Slice them thinly into rounds, about 0.5 cm thick. Slicing them to a uniform thickness is key for even cooking. Finely chop the green onion and Korean green chili pepper. If you prefer more heat, feel free to adjust the amount of chili pepper.
Step 2
In a bowl, combine 2 tablespoons of potato starch with 50ml of water. Whisk until there are no lumps, creating a thin batter. Add the sliced potatoes to this mixture and gently toss them until they are evenly coated with the starch. This light coating will help achieve a wonderfully crispy exterior when fried.
Step 3
Season the starch-coated potatoes with 1/2 teaspoon of salt and mix gently. The salt enhances the potato’s flavor and helps the starch adhere better. Ensure the salt is evenly distributed throughout the potato slices.
Step 4
Heat a pan over medium heat and add a generous amount of cooking oil. Arrange the starch-coated potato slices in a single layer, making sure they don’t overlap. Fry one side until golden brown, then flip and fry the other side until equally golden and crispy. Continue to cook, flipping occasionally, until the potatoes are cooked through and have a satisfying crunch on the outside.
Step 5
While the potatoes are frying, let’s prepare the seasoning. In a small bowl, combine the chopped green onion, 1/2 tablespoon of minced garlic, 1 tablespoon of soy sauce, and 1 tablespoon of gochugaru. Mix well to create the seasoning sauce. For a touch of sweetness, you can add a little sugar or corn syrup to taste.

Once the potatoes are nicely fried and crispy, transfer them to a bowl. Pour the prepared seasoning sauce over the potatoes. Gently toss the potatoes to ensure the seasoning is evenly distributed, taking care not to break them apart. Add the chopped Korean green chili pepper and mix again to incorporate its spicy kick.
