Ingredients- 1 bunch scallions (approx. 300-400g)
- 1/2 cup fish sauce (anchovy or sand lance)
- 1 cup gochugaru (Korean chili powder, fine grind)
- 1 Tbsp minced garlic
- 2 Tbsp sugar
- 1/3 cup vinegar
- Sweet rice paste (cooked and cooled beforehand)

First, prepare your fresh scallions. Trim the roots and remove any wilted or damaged leaves. Wash them thoroughly under running water to remove all dirt and debris. It’s crucial to drain them completely in a colander afterward, as this prevents the kimchi from becoming watery and helps it last longer.

While the scallions are draining, let’s make the sweet rice paste, which adds a wonderful depth of flavor to the kimchi. You can easily make it by simmering 1-2 tablespoons of sweet rice flour with 1 cup of water over low heat, stirring constantly.
