How about some kimchi fried rice made with chewy squid beaks? You can create a wonderful meal with simple ingredients. It’s perfect as a snack for kids or a special dish for occasions!
Main Ingredients- 1/4 head of well-fermented kimchi (approx. 200g)
- 100g squid beaks (with teeth removed and thoroughly washed)
- 1/2 stalk of green onion
- 2 Tbsp butter
- 2 bowls of warm cooked rice
Seasoning- 2 Tbsp cooking oil
- 1 Tbsp oyster sauce
- 1 Tbsp sesame oil
- 1 pinch of sugar (optional, to adjust kimchi sourness)

Cooking Instructions
Step 1
First, prepare 1/4 head of kimchi. Squeeze out excess water and finely chop it into pieces about 1cm in size. If the kimchi is very sour, you can rinse it lightly and then squeeze out the water.
Step 2
Thoroughly wash the 100g of squid beaks, then finely chop them into bite-sized pieces, about 1cm. It’s important to cut them into appropriate sizes so they aren’t too tough.
Step 3
Wash the green onion and thinly slice it crosswise. We’ll use this to make fragrant green onion oil.
Step 4
Now, let’s make the essential green onion oil for the fried rice. Heat a frying pan over medium heat, then add 2 Tbsp of butter and 2 Tbsp of cooking oil. Once the butter has melted, add the sliced green onions and stir-fry until fragrant and slightly golden, being careful not to burn them. Frying the green onions until they are lightly browned will add a deeper flavor.
Step 5
Once the green onion oil is ready, add the chopped squid beaks to the pan and stir-fry over medium heat for about 1-2 minutes. The squid beaks will start to cook and develop a chewy texture.
Step 6
When the squid beaks are somewhat cooked, add the chopped kimchi and stir-fry them together. Continue to sauté for about 2-3 minutes until the kimchi becomes translucent and tender. If the kimchi is too sour, you can add a tiny pinch of sugar at this stage.
Step 7
Add 1 Tbsp of oyster sauce to the sautéed ingredients for an extra umami boost. Stir well to combine with the kimchi and squid beaks, and cook for another minute. Oyster sauce is the secret ingredient that adds delicious depth.
Step 8
Finally, add 2 bowls of warm cooked rice. Use a spatula to break up any clumps and stir-fry until the rice is fluffy and well combined with the other ingredients. Continue stir-frying for another 2-3 minutes to ensure everything is evenly mixed.
Step 9
Turn off the heat, drizzle with 1 Tbsp of sesame oil for added aroma, and your delicious squid beak kimchi fried rice is complete! If your kimchi is too sour, remember to add a pinch of sugar during step 8 to balance the flavor. Enjoy your meal!
