  • Carrot: to taste (thinly julienned)
  • Lettuce: to taste (roughly chopped)
  • Perilla leaves: to taste (roughly chopped)
  • Shredded seaweed (Gim): a little
  • Sesame seeds: a small amount

Tray Makguksu Sauce

  • Gochugaru (Korean chili flakes): 2 Tbsp
  • Gochujang (Korean chili paste): 1.5 Tbsp
  • Sugar: 2 Tbsp
  • Vinegar: 1.5 Tbsp
  • Sesame oil: 1 Tbsp
  • Soy sauce: 1 Tbsp
  • Sprite or clear soda (for adjusting consistency): about 50ml

Cooking Instructions

Step 1

First, prepare the fresh vegetables. Wash the lettuce and perilla leaves and roughly chop them into bite-sized pieces. For the cabbage and carrot, julienne them as thinly as possible for the best texture. Prepping the vegetables first will make the cooking process much smoother.

Step 1

Step 2

Now, let’s make the delicious sauce that’s the heart of makguksu! In a bowl, combine 2 Tbsp gochugaru, 1.5 Tbsp gochujang, 2 Tbsp sugar, 1.5 Tbsp vinegar, 1 Tbsp sesame oil, and 1 Tbsp soy sauce. Mix well. If the sauce seems too thick, gradually add Sprite or a clear soda until you reach your desired consistency. The soda adds a subtle sweetness and enhances the overall flavor.

Step 2

Step 3

Cook the buckwheat noodles to perfection. Bring a pot of water to a boil and add the buckwheat noodles. Cook for about 3-4 minutes, or according to package instructions. Be careful not to overcook them, as they can become mushy. Once cooked, quickly rinse the noodles under cold water to remove excess starch. Drain them thoroughly in a colander, ensuring all excess water is removed, as this can dilute the sauce.

Step 3

Step 4

It’s time to plate your beautiful dish! Arrange the drained buckwheat noodles attractively on a large plate or tray. Next, artfully arrange the julienned vegetables on top of the noodles, adding a vibrant splash of color. A colorful arrangement makes the dish visually appealing and even more appetizing.

Step 4

Step 5

Finally, let’s add the finishing touch! Spoon the prepared spicy and sweet makguksu sauce over the noodles and vegetables. You can adjust the amount of sauce to your preference. Sprinkle a generous amount of shredded seaweed (gim) and a scattering of sesame seeds to complete your delicious tray buckwheat noodles! Mix everything together and enjoy.
