A Kyonggi Rice Octopus Sausage Sushi and Tuna Kimbap Lunchbox to Enjoy at Home When You Miss Traveling
This is a special home-cation lunchbox made with plenty of heart. Enjoy a wonderful meal at home with octopus-shaped sushi topped with cute octopus sausages and kimbap packed with delicious fillings. We’ve prepared a menu that both children and adults will love.
Octopus Sausage Sushi- Kyonggi rice (or regular rice) 500g
- Dried kelp 2 pieces (approx. 5x5cm)
- Sesame oil 1 Tbsp
- Salt 1 tsp
- Vienna sausages 12 pieces
- Nori (seaweed sheet) 1 piece
- Whole sesame seeds a little
- Black sesame seeds a little
- Minced vegetables (carrot, broccoli, burdock root, etc.) 1 Tbsp (optional)
- Tofu pouches simmered in soy sauce 6 sheets
Tuna Kimbap- Kyonggi rice (or regular rice) 500g
- Tuna cans, drained 2 cans
- Sesame oil 2 Tbsp
- Salt 1 tsp
- Kimbap seaweed sheets 5 sheets
- Stir-fried carrots, about 1/2 carrot worth
- Pickled cucumbers (or pickled cucumber) 5 pieces
- Egg omelet, about 2 eggs worth
- Stir-fried fish cakes 2 sheets
- Kyonggi rice (or regular rice) 500g
- Tuna cans, drained 2 cans
- Sesame oil 2 Tbsp
- Salt 1 tsp
- Kimbap seaweed sheets 5 sheets
- Stir-fried carrots, about 1/2 carrot worth
- Pickled cucumbers (or pickled cucumber) 5 pieces
- Egg omelet, about 2 eggs worth
- Stir-fried fish cakes 2 sheets
Cooking Instructions
Step 1
1. Prepare 1kg of rice for cooking. Place the rice in a bowl and gently rinse it 4-5 times under running water to remove excess starch. Rinsing until the water runs clear will result in fluffy, well-cooked rice.
Step 2
2. Drain the rinsed rice in a sieve for about 15 minutes. Add the rice and water to your rice cooker, along with 2 pieces of dried kelp. (Adding 1 tablespoon of mirin can enhance the flavor of the rice if you like.) Cook the rice using the white rice or standard cooking mode.
Step 3
3. Make 3-4 incisions on each of the 12 Vienna sausages intended for the octopus sushi. When cooked, these cuts will curl up, creating a cute octopus shape. Lightly grease a pan over low heat and grill the sausages until golden brown. Let the cooked sausages cool slightly. Use a toothpick to gently press black sesame seeds onto the ‘head’ of each sausage to create the eyes.
Step 4
4. Prepare 6 tofu pouches that have been simmered in soy sauce. Fold each pouch in half to create 12 sushi pockets. In a bowl, combine the cooked rice with minced vegetables, 1 tablespoon of sesame oil, 1 teaspoon of salt, and a pinch of whole sesame seeds, mixing well to season the sushi rice. Stuff the seasoned rice into the tofu pouches. Top with the prepared octopus sausages. Finely shred some nori (seaweed) and tie it around the sushi like a ribbon to complete the cute octopus sausage sushi.
Step 5
5. For the tuna kimbap, prepare 5 sheets of kimbap seaweed. Place a sheet of seaweed on a kimbap rolling mat. Spread a thin layer of rice over the seaweed. Arrange the stir-fried fish cake, stir-fried carrots, sliced 단무지 (pickled radish), egg omelet strips, drained tuna, and julienned pickled cucumbers in order. Roll the kimbap tightly, pressing firmly to ensure it holds its shape. Brush the outside of the finished kimbap with 2 tablespoons of sesame oil for a glossy finish. Slice into bite-sized pieces to complete your delicious tuna kimbap.
