Creamy & Healthy Cauliflower Pasta
Healthy & Delicious ‘Cauliflower Cream Pasta’ Recipe Using Seasonal Ingredients *
Following our previous guide on how to prepare and store cauliflower, this recipe uses steamed cauliflower to create a rich and creamy pasta dish. It’s a healthy and delightful meal the whole family can enjoy together. ^^
Main Ingredients- Steamed cauliflower florets 2 cups (paper cup measurement)
- Ground meat 1/2 cup
- Onion 1/2 (small)
- Scallion 1/2 stalk
- Bell pepper a little (optional)
- Capers 1 tsp (optional)
Cream Sauce- Milk 1 cup (200ml, paper cup measurement)
- Cream cheese 1/2 Tbsp (or heavy cream)
- Grated Parmesan cheese 1 tsp
- Milk 1 cup (200ml, paper cup measurement)

Cooking Instructions
Step 1
Prepare all the ingredients needed for the pasta. For best results, ensure the cauliflower is steamed until tender.
Step 2
For this recipe, we’re using ‘fusilli,’ a short pasta shape that’s perfect for scooping up cauliflower and creamy sauce. Feel free to substitute with your favorite pasta shape.
Step 3
Finely chop the vegetables like onion, scallion, and bell pepper. Cut the steamed cauliflower into bite-sized pieces; avoid chopping them too finely to maintain a pleasant texture.
Step 4
Get a wide pan and a pot ready. Fill the pot halfway with water, add 1 tablespoon of salt, and bring it to a boil for cooking the pasta. In the wide pan, add 1 tablespoon of oil and 1 teaspoon of butter, and heat over medium heat.
Step 5
Once the pan is warm, add the minced garlic and sauté until fragrant over medium-low heat. This step builds a wonderful aromatic base.
Step 6
When the garlic is fragrant, add the ground meat and break it apart with your cooking utensil. Stir-fry until it’s nicely browned. Add a pinch of salt for seasoning.
Step 7
Continue to cook the meat until it has rendered some of its fat. Then, add the chopped onion and scallion, and stir-fry together until the vegetables soften and sweeten.
Step 8
Once the onions become translucent, reduce the heat to low. Pour in 1 cup of milk (200ml, measured with a paper cup). Be careful not to cook over high heat, as milk can scorch.
Step 9
As the milk warms up, add 1/2 tablespoon of cream cheese and whisk until it’s smoothly incorporated. The cream cheese will help thicken the sauce and add a delightful richness.
Step 10
When you see small bubbles forming around the edges of the milk, add the steamed cauliflower and bell pepper (if using). Let it simmer gently to allow the flavors to meld.
Step 11
Meanwhile, cook the pasta in the boiling salted water according to package directions until al dente. Drain the pasta well, then toss it with 2 tablespoons of olive oil to prevent it from sticking together.
Step 12
Add the oiled pasta to the pan with the simmering cream sauce.
Step 13
Season with salt and pepper, about three pinches each. Taste and adjust the seasoning as needed to suit your preference.
Step 14
Finally, stir in 1 teaspoon of grated Parmesan cheese. Gently toss everything together until the pasta is well coated with the creamy sauce. If you’re using capers, add them now. Your delicious cauliflower cream pasta is ready to serve!
