A special dish where well-fermented aged kimchi and tender pork back ribs meet, creating a deep and rich flavor. This aged kimchi pork back-rib stew is excellent as a side dish for rice or as a perfect companion for drinks.
Main Ingredients- Boiled pork back ribs 1.5kg
- Aged Kimchi (small size) 3 heads
- Perilla leaves (깻잎) 10 leaves
- Green onion (대파) 1/2 stalk
Seasoning- Store-bought Pork Galbi Sauce 5 Tbsp
- Soy sauce (Jin Ganjang) 2 Tbsp
- Minced garlic 1 Tbsp
- Black pepper to taste
- Water 3-4 cups

Cooking Instructions
Step 1
First, prepare the well-fermented aged kimchi, which is the key to a delicious aged kimchi pork back-rib stew. We used 3 small heads of aged napa cabbage kimchi. If you’re using larger heads, about half a head should be sufficient.
Step 2
Next, it’s time to prepare the pork back ribs. Please prepare 1kg of pork back ribs that have been boiled using a special recipe that yields tender ribs without any gamey smell. (Recipe link: @6945003)

Now, let’s make the seasoning sauce that will add delicious flavor. For convenience, I’ve used a store-bought pork galbi sauce. If you prefer not to use store-bought sauce, you can mix soy sauce, oligosaccharide, ginger powder (or ginger juice), sugar, and oyster sauce to create your own. Combine the sauce ingredients: pork galbi sauce (or your homemade sauce), soy sauce, minced garlic, and black pepper. Then, add 3-4 cups of water to complete the seasoning sauce.
Step 4
Now, let’s start the stewing process. Place the prepared aged kimchi at the bottom of the pot, and then arrange the boiled pork back ribs on top. After that, pour the prepared seasoning sauce evenly over the ribs.
Step 5
Bring the stew to a rolling boil over high heat for 10 minutes to allow the flavors to meld. After 10 minutes, carefully take the aged kimchi from the bottom and place it on top of the ribs. This step allows the kimchi to absorb the flavor of the ribs, and the ribs to absorb the tangy flavor of the kimchi, resulting in an even richer taste. After moving the kimchi to the top, continue to simmer for another 10 minutes.
Step 6
Finally, chop the perilla leaves and green onion into bite-sized pieces and arrange them attractively on top of the stew. Simmer for another 1-2 minutes to allow the fragrant flavors of the perilla leaves and green onion to infuse into the dish. Your delicious aged kimchi pork back-rib stew is now ready! Serve immediately while warm for the best taste.
