Quick and Easy Tteokkochi Recipe Using Leftover Rice Cakes – Loved by Kids and Adults!
Here’s a delicious tteokkochi recipe made with leftover tteok (rice cakes) from tteokguk (rice cake soup) or other rice cakes. They have a wonderfully chewy exterior and a soft interior, perfect for a quick snack that both kids and adults will adore! It’s also a fantastic option for a late-night bite or a simple appetizer.
Main Ingredients- 300g rice cakes (tteokguk tteok or long, sliced rice cakes)
- 1 Tbsp cooking oil
Sweet and Spicy Tteokkochi Sauce- 2 Tbsp tomato ketchup
- 2/3 Tbsp soy sauce (regular soy sauce is fine)
- 2 Tbsp corn syrup (oligosaccharide syrup can be substituted)
- 1/2 tsp gochujang (Korean chili paste)
- 1 pinch red pepper flakes (adjust to your spice preference)
- 2.5 Tbsp water
- 2 Tbsp tomato ketchup
- 2/3 Tbsp soy sauce (regular soy sauce is fine)
- 2 Tbsp corn syrup (oligosaccharide syrup can be substituted)
- 1/2 tsp gochujang (Korean chili paste)
- 1 pinch red pepper flakes (adjust to your spice preference)
- 2.5 Tbsp water
Cooking Instructions
Step 1
First, rinse the rice cakes thoroughly under running water and drain them well. If you’re using frozen or dried-out rice cakes that have become hard, soak them in lukewarm water for about 30 minutes until they soften up nicely before proceeding.
Step 2
Let’s prepare the delicious sweet and spicy sauce that will make this tteokkochi irresistible! In a bowl, combine 2 tablespoons of tomato ketchup, 2/3 tablespoon of soy sauce, 2 tablespoons of corn syrup, 1/2 teaspoon of gochujang, a pinch of red pepper flakes, and 2.5 tablespoons of water. Stir everything together until well combined and smooth, ensuring there are no lumps. Having the sauce ready beforehand makes the cooking process much quicker.
Step 3
Heat 1 tablespoon of cooking oil in a pan over low heat. Add the drained rice cakes to the pan. Keep the heat on low and stir occasionally, making sure the rice cakes don’t stick together. Grill them slowly until they become slightly golden brown and a little crispy on the outside, while remaining chewy inside. This gradual cooking is key to achieving the perfect texture.
Step 4
Once the rice cakes are nicely grilled to your liking, turn off the gas stove completely for a moment. Now, carefully pour the prepared sauce into the pan. It’s crucial to turn off the heat before adding the sauce, as a very hot pan can cause the sauce to splatter vigorously, so please be cautious.
Step 5
Turn the gas stove back on to a very low heat. Gently stir the rice cakes and sauce together until they are evenly coated and the sauce has thickened slightly, clinging beautifully to the rice cakes. Once coated and slightly reduced, turn off the heat. Your delicious tteokkochi is now ready! For an extra touch of flavor and texture, feel free to sprinkle with crushed peanuts or sesame seeds to your preference.
