These pancakes are fantastic whether you tear them apart with your hands to enjoy or slice them and dip them in soy sauce. You don’t need any special ingredients, so let’s get started and make them right away!

First, we’ll prepare the batter for the pancakes. Using a mix of glutinous rice flour and all-purpose flour creates a wonderfully chewy and delicious texture. In a bowl, combine 1/2 cup of glutinous rice flour and 1/2 cup of all-purpose flour. Add 1/2 cup of water and mix until there are no lumps. Then, season with 1/2 teaspoon of salt and a pinch of black pepper. For a vibrant color and enhanced flavor, I’ll be adding thinly julienned carrots, but feel free to omit them if you prefer.

If julienning carrots feels like too much work, don’t hesitate to skip them! Now, take the prepared Napa Cabbage leaves and dip them into the batter, ensuring both sides are evenly coated. Gently coat each leaf with the batter, being careful not to mash the cabbage leaves, as this could make them fall apart.

Heat a frying pan with a generous amount of cooking oil over medium-low heat. Place the batter-coated cabbage leaves onto the hot pan and cook until golden brown on both sides. Cooking over medium-low heat ensures the pancakes cook through evenly without burning. Once one side is golden, flip it over and cook the other side until golden brown as well.
