  • 1 pack Vienna Sausages
  • 150g Regular Sausages
  • 340g SPAM
  • 4 Frankfurters
  • 1/2 block Tofu
  • 1 Onion

  • 500g Store-bought Beef Bone Broth (1 pack)
  • 200g Kimchi

Before we start making Budae Jjigae, let’s get our ingredients ready! The key to Budae Jjigae is to include plenty of various types of ham. SPAM and kimchi are essential ingredients that you absolutely shouldn’t skip. You can add canned beans if you have them, but since they often go unused, we’ll skip them for this recipe.

Peel the onion. You can slice it into strips or dice it. I chose to dice it into larger pieces for a better texture.

Chop the Cheongyang peppers finely. If you have a couple left in your fridge, use them all up! These add a nice kick of heat.

Now, let’s prepare the hams that give Budae Jjigae its delicious flavor! Score the Vienna sausages and frankfurters with cuts for better cooking and presentation. Slice the pink bologna sausage into bite-sized pieces. Slice the SPAM, and cut the bulgogi ham into appropriate sizes as well. All the ham is prepped!

Arrange the various types of sliced ham beautifully in the bottom of a pot. Budae Jjigae just isn’t the same without SPAM! I like SPAM, so I added a generous amount, but feel free to adjust the quantity to your liking.

Slice the half block of tofu into bite-sized pieces.

Slice the green onion diagonally. This allows the flavor to infuse more nicely into the broth.

In the center of the pot, where the ham is arranged, add a moderate amount of kimchi. If you add too much kimchi, it can turn into Kimchi Jjigae, so about a handful is perfect.

Layer the sliced green onion and tofu over the kimchi. Arranging the ingredients attractively also makes the dish look more appetizing!

For this simple Budae Jjigae recipe, we’re skipping the homemade broth and using store-bought beef bone broth. For about 3 servings, pour in one pack (500g) of beef bone broth. Add a little water to prevent the broth from becoming too concentrated.

The broth will get its base flavor from the beef bone broth and kimchi. If it needs more seasoning, add a bit of gochugaru (Korean chili powder). If it’s still not salty enough, add a touch of soup soy sauce or salt to taste. Be careful not to make it too salty.
