Cooking Instructions
Step 1
1. Prepare the core ingredients: ginseng, vegetables (carrot, onion, green onion), chicken thigh meat, shrimp, and beef. 2. Lightly beat the two eggs in a bowl to create an egg wash for coating.
Step 2
3. Thoroughly wash the 70g of ginseng, cut it into three pieces, rinse under running water, and finely mince it. 4. Finely mince the 30g of shrimp, 60g of beef, and 40g of chicken thigh meat. 5. Finely chop the 25g of green onion, 30g of onion, 15g of carrot, and 20g of minced garlic. Finely chopping the vegetables ensures they bind well with the meat and add a pleasant texture.
Step 3
6. In a mixing bowl, combine 30g of flour and 20g of starch to form the base for the coating. 7. Mix the minced shrimp and chicken thigh meat with the prepared vegetables (carrot, onion, green onion). Coat this mixture thoroughly with the flour and starch mixture from step 6. 8. Similarly, mix the minced beef with the remaining vegetables and coat it evenly with the flour and starch mixture. 9. Shape the coated shrimp and chicken mixture, and the beef mixture separately, into round or desired shapes. Dip each shaped piece into the prepared egg wash, ensuring it’s fully coated. 10. Carefully coat the egg-washed pieces with the finely minced ginseng, pressing gently to adhere. Finally, coat the ginseng-covered pieces generously with bread crumbs for a crispy exterior. Ensuring the bread crumbs are well-attached will result in a perfectly crisp fry.
Step 4
11. Heat frying oil to 170°C (338°F). Carefully place the ginseng-coated ingredients into the hot oil. Fry for approximately 18 to 22 minutes, or until the exterior is golden brown and crispy. Ensure the ingredients cook through evenly by managing the heat.
Step 5
12. Once fried to perfection, remove the ginseng fries from the oil and drain on a paper towel to absorb excess oil. Arrange the shrimp and chicken thigh fries, and the beef fries separately on a serving plate. 13. Serve the ginseng fries with complementary sauces for an enhanced taste experience. We recommend serving the beef ginseng fries with a zesty wasabi mayonnaise sauce, and the shrimp and chicken thigh ginseng fries with a sweet and slightly spicy sweet chili sauce. Enjoy these delightful ginseng fries with your chosen sauces for a truly special culinary experience!
