A Flavorful Spinach and Pork Curry Recipe
Curry is a wonderfully versatile dish that can be transformed with various ingredients, making it a fantastic way to use up what you have on hand. On days when you make curry, meal preparation becomes significantly easier as you don’t need to prepare many side dishes; a simple kimchi is all you need! Today, I’ve created a simple yet delicious curry using plenty of fresh spinach, some onion from the fridge, and minced pork from the freezer. This recipe is packed with the goodness of vegetables and meat, offering both nutrition and great taste.
Main Ingredients- 2 handfuls fresh spinach (approx. 200g)
- 1/2 cup minced pork (approx. 100g)
- 1/2 medium onion
- 1/2 Tbsp minced garlic
- 3 Tbsp curry powder
- 6 Tbsp water (for curry powder)
- 1 cup water (for cooking curry, approx. 200ml)
- 2 pinches salt
- 1 pinch black pepper
- A little cooking oil
Cooking Instructions
Step 1
First, wash 2 handfuls of spinach thoroughly and set aside. Peel and thinly slice 1/2 onion. Sliced onions will soften and add sweetness when sautéed later.
Step 2
In a small bowl, combine 3 Tbsp of curry powder with 6 Tbsp of water. Whisk until smooth and no lumps remain. While you can add curry powder directly to the pan, it tends to clump and mix unevenly with ingredients. Dissolving it in water beforehand makes for a much smoother curry.
Step 3
Heat a little cooking oil in a pan over medium heat. Add 1/2 cup of minced pork and cook, stirring. Add 1/2 Tbsp minced garlic, 2 pinches of salt, and 1 pinch of black pepper. Stir well and sauté until the pork is browned and cooked through. Ensure there’s no porky smell by cooking it sufficiently.
Step 4
Once the pork is well-cooked, add the sliced onions to the pan. Sauté the onions together with the pork. Onions are a key ingredient for the curry’s flavor. Following a tip often shared by chefs, sautéing the onions for a longer time until they caramelize – becoming translucent, developing a brownish hue, and releasing a sweet aroma – significantly enhances the curry’s umami and deep flavor. Don’t be afraid to let them brown a little.
Step 5
Pour 1 cup (approx. 200ml) of water into the pan with the cooked pork and onions. Add the pre-mixed curry sauce. Stir well to combine everything and bring to a simmer. Once it starts boiling, reduce the heat to low.
Step 6
Finally, add the 2 handfuls of prepared spinach to the curry. Cover the pan and let it cook on low heat for 1-2 minutes, just until the spinach wilts. Spinach can become mushy and lose its vibrant color if overcooked, so only cook it briefly until it’s tender and mixed in. Stir gently to combine.

Your delicious Spinach and Pork Curry is ready! Packed with fresh spinach and enhanced by the rich flavor of pork and caramelized onions, this curry is a real treat. Caramelizing the onions maximizes their sweetness and umami, resulting in a deeply satisfying flavor. Adding spinach at the very end preserves its crisp texture and bright green color.
