Ingredients

  • 500-600g raw duck meat (sliced for grilling/roasting)
  • 2 fresh potatoes
  • 1 onion
  • 10 whole garlic cloves
  • 1/2 green onion (scallion)

For Marinade Base

  • 1/2 onion
  • 1/4 to 1/2 pear

Duck Marinade

  • 2-3 Tbsp red chili powder (gochugaru)
  • 1 Tbsp red chili paste (gochujang)
  • 3-4 Tbsp soy sauce
  • 1.5 Tbsp minced garlic
  • 1 tsp grated ginger
  • 3-4 Tbsp corn syrup or other liquid sweetener (oligosaccharide)
  • 2 Tbsp rice wine or mirin (for duck odor removal)
  • 1 tsp sugar
  • A pinch of black pepper

Seasoning During Stir-fry

  • Salt to taste
  • Sugar to taste
  • A little sesame oil
  • A little toasted sesame seeds

Cooking Instructions

Prepare the ingredients for the marinade base: chop half an onion and quarter to half a pear. Remove the core from the pear before chopping.

Place the chopped onion and pear into a blender and blend until very smooth. Aim for a fine puree with no lumps.

In a large bowl, combine all the duck marinade ingredients (red chili powder, red chili paste, soy sauce, minced garlic, grated ginger, liquid sweetener, rice wine/mirin, sugar, pepper). Add the blended onion and pear puree and mix everything well. The grated ginger and rice wine (or mirin/soju) are crucial for eliminating any gamey or unpleasant odor from the duck.

Add the fresh duck meat to the prepared marinade. Use your hands to thoroughly mix and coat each piece of duck, ensuring the marinade penetrates well. Massage the marinade into the meat for best flavor absorption.

Transfer the marinated duck to an airtight container or cover it with plastic wrap. Refrigerate for at least 1-2 days to allow the flavors to meld and deepen. The longer it marinates, the richer the taste will be.

Prepare the vegetables. Wash the fresh potatoes and slice them about 0.7-1 cm thick. Avoid slicing them too thinly, as they might break apart when cooked. Slice the onion into thick pieces (about 1 cm). Cut the green onion diagonally into 4-5 cm lengths. Halve or quarter the whole garlic cloves.

Heat a deep pan or wok over medium heat. Add the marinated duck meat, sliced garlic cloves, and fresh potatoes. Stir-fry continuously, mixing everything together, until the duck is cooked and the potatoes are almost tender. Make sure to check the tenderness of the potatoes.

Once the potatoes are nearly cooked, add the sliced green onions and onions to the pan. Increase the heat to high and stir-fry quickly for 2-3 minutes. This is key to keeping the vegetables crisp.
