Donggeurangttaeng (Korean Pork Patties) are always a hit at any meal! You don’t need many ingredients; ground pork, chives, and scallions are enough to create a wonderfully tasty dish. This recipe makes delicious, moist patties with minimal effort, perfect for both festive occasions and everyday meals.
Main Ingredients- 300g ground pork (with moderate fat content)
- 1/2 block firm tofu (about 150g)
- 100g scallions (mostly the white part)
- 100g chives
- 1 Cheongyang chili pepper (optional, for a spicy kick)
- 2 large eggs
- 50g pancake mix (or all-purpose flour)
Seasoning & Flavoring- 2 Tbsp soy sauce
- 1 Tbsp oyster sauce (for enhanced umami!)
- 1 Tbsp sesame oil
- Pinch of salt (to taste)
- Pinch of black pepper

Step 1
First, let’s prepare the vegetables for the donggeurangttaeng. Finely chop 100g of scallions, focusing on the white parts. Wash 100g of chives, pat them dry, and then chop them into small pieces. If using, deseed and finely mince 1 Cheongyang chili pepper for a spicy flavor. You can omit or adjust the amount based on your preference.
Step 2
Tofu adds a wonderfully tender texture to the patties. Take 1/2 block (about 150g) of firm tofu, place it in a cheesecloth or clean kitchen towel, and squeeze out as much water as possible. Removing excess moisture is crucial to prevent the mixture from becoming too wet and to help the patties hold their shape.

Now, let’s mix the patty batter. In a large bowl, combine the squeezed tofu, chopped scallions, chives, and minced chili pepper. Add 300g of ground pork. Season with a pinch of salt and a pinch of black pepper. Then, add 2 Tbsp soy sauce, 1 Tbsp oyster sauce, and 1 Tbsp sesame oil. Mix everything together with your hands, gently but thoroughly, until well combined.
