Main Ingredients- 300g blanched chili leaves
- 1 stalk green onion
Seasoning Ingredients- 3 Tbsp kelp soy sauce
- 1 Tbsp minced garlic
- 1 to 1.5 Tbsp chili powder
- 1 tsp sugar
- 1.5 Tbsp perilla oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
First, gently rinse the blanched chili leaves in cold water 1 to 2 times by swishing them around. This step removes any impurities and ensures a clean flavor. If you are using fresh, unblanched chili leaves, bring a pot of water to a rolling boil, add 1 tsp of salt, blanch for 1 to 2 minutes, then rinse in cold water before preparing.
Step 2
While rinsing, check for any tough or fibrous parts on the stems of the chili leaves and trim them off. This will help create a more tender texture for the entire dish.
Step 3
Finely chop the green onion. The fragrant aroma of the green onion will add depth to the stir-fried dish.
Step 4
Gently squeeze out the excess water from the washed chili leaves with your hands. Then, add all the prepared seasoning ingredients (kelp soy sauce, minced garlic, chili powder, sugar, perilla oil) and mix well by massaging the leaves with your hands. After mixing thoroughly, let it sit for about 10 minutes to allow the flavors to fully meld into the chili leaves.
Step 5
Heat a pan over medium heat. Add the marinated chili leaves and stir-fry quickly for 3 to 5 minutes. It’s important to stir-fry just long enough to maintain a crisp texture, as overcooking can make them mushy. Taste as you stir-fry and adjust the seasoning with more soy sauce or salt if needed. If the dish seems too dry during cooking, add about half a cup of water while stir-frying to keep it moist.
Step 6
Finally, sprinkle generously with toasted sesame seeds for a nutty finish. Your delicious stir-fried chili leaves are ready to be enjoyed with a warm bowl of rice!
