Essential Ingredients- 1 pack of crab sticks (larger ones are recommended for a better bite)
- 1 large egg (use a fresh one)
- 8 perilla leaves (choose fresh, fragrant ones)
- 1/2 cup of pancake mix (using a standard paper cup as measurement)
Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly and pat them dry to remove excess moisture. Lightly and evenly coat the inner side (the rough side) of each perilla leaf with pancake mix. This helps the crab stick adhere well and ensures the batter coats evenly later. Place a crab stick on the prepared perilla leaf and carefully roll it up tightly, just like making a small sushi roll. Gently press the edges to seal.
Step 2
Now it’s time to give the rolled perilla leaf and crab stick a delicious coating. Lightly dust the rolled parcels with a little more pancake mix. Then, dip each parcel into a bowl of lightly beaten egg, ensuring it’s fully coated. Aim for a thin, even layer of egg batter; this prevents the fritters from becoming too greasy when fried and results in a cleaner taste.
Step 3
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Once the oil is shimmering, carefully place the egg-coated perilla leaf and crab stick fritters into the pan. Pan-fry them, flipping occasionally, until they are golden brown and crispy on both sides. The aromatic perilla leaves and chewy crab sticks will combine to create a wonderfully flavorful fritter. Keep an eye on the heat to prevent burning and ensure even cooking. Serve immediately while warm for the best texture and flavor. You can also serve them with a side of soy dipping sauce, if desired.
