Let’s learn how to boil pork belly that is tender, juicy, and completely free of any gamey odor.
Ingredients- Pork Belly 1kg (choose a piece with a good balance of lean meat and fat)
- Doenjang (fermented soybean paste) 1 Tbsp
- Instant Coffee 1 tsp (helps remove odor and improve color)
- Green Onion 1 stalk (cut into large pieces)
- Onion 1/2 (cut into large pieces)
- Garlic 6 cloves
Cooking Instructions
Step 1
We’re going to make delicious boiled pork belly (Suyuk) that’s tender and has no unpleasant smell. This recipe focuses on using a good cut of pork belly, ensuring a perfect balance of meat and fat for the best flavor and texture.
Step 2
In a pot, add water to cover the pork belly. Then, stir in 1 Tbsp of Doenjang and 1 tsp of instant coffee. Doenjang is excellent for neutralizing any pork odor, and the coffee not only helps with odor but also gives the meat a beautiful, appetizing color. Add a large stalk of green onion, half an onion, and 6 cloves of garlic to infuse the water with aromatics.
Step 3
Carefully place the prepared pork belly into the pot. Ensure there’s enough water to fully submerge the meat. Cover the pot with a lid and bring it to a rolling boil over high heat. Starting on high heat helps to seal the surface of the meat, locking in the juices.
Step 4
Once the water is boiling vigorously, remove the lid and reduce the heat to medium. Let it simmer for about 25-30 minutes. For even cooking, you can flip the pork belly halfway through. To check for doneness, insert a skewer or fork into the thickest part; if clear juices run out, it’s ready.
Step 5
Once the pork belly is perfectly cooked, let it cool slightly before slicing it into bite-sized pieces, about 1cm thick. This delicious, tender Bossam is best enjoyed wrapped in fresh lettuce with kimchi, ssamjang (dipping paste), and salted shrimp. Enjoy your wonderfully tender and flavorful homemade pork belly!
