With hallabong fruit in season and tasting its best, I decided to make a homemade hallabong syrup! You can easily enjoy a refreshing and sweet ade at home with this syrup. Let’s make a special home cafe experience. I’ll even share how to use the leftover peel!

Ingredients for Hallabong Syrup

  • 600g fresh Hallabong pulp
  • Baking soda for thorough cleaning
  • 600g sugar (equal weight to hallabong)
  • Sparkling water, chilled (to taste)
  • Ice cubes (crushed or whole)
  • Fresh mint sprigs for garnish

Cooking Instructions

First, sprinkle a generous amount of baking soda onto the fresh hallabong.

Gently rub the fruit with your hands to remove any dirt or residue from the peel. Washing thoroughly ensures you can enjoy it without worry.

Carefully peel the clean hallabong.

Using scissors, trim off the very top and bottom ends of the hallabong.

Starting from the cut ends, gently peel the skin outwards into sections. Be careful not to mash the delicate fruit segments.

Once peeled, carefully separate the hallabong segments, keeping the pulp intact. It’s best to remove any seeds at this stage.

Combine the prepared 600g of hallabong pulp with 600g of sugar in a bowl. Stir well until the sugar begins to dissolve. The 1:1 ratio is classic, but feel free to adjust to your preference.

Stir until the sugar starts to melt and form a syrupy consistency with the fruit. Transfer the mixture to an airtight container and refrigerate for at least one day to allow the flavors to meld and deepen.
