Main Ingredients- Leftover Chicken 5 pieces (e.g., Korean fried chicken, fried chicken)
- Onion 1/2 medium
- Green Onion 3 stalks
- Eggs 2 large
- Shredded Mozzarella Cheese 1 handful (approx. 50-70g)
- Lettuce Leaves 6 large
- Warm Cooked Rice 2 bowls
Sauce & Seasoning- Soy Sauce 2 Tbsp
- Oyster Sauce 1 tsp
- Corn Syrup (or Oligosaccharide) 2 Tbsp
- Sugar 1 Tbsp
- Mirin (or Cooking Sake) 1 Tbsp
- Water 4 Tbsp
- Mayonnaise 2 Tbsp
- Balsamic Glaze 2 Tbsp
- Soy Sauce 2 Tbsp
- Oyster Sauce 1 tsp
- Corn Syrup (or Oligosaccharide) 2 Tbsp
- Sugar 1 Tbsp
- Mirin (or Cooking Sake) 1 Tbsp

Cooking Instructions
Step 1
Before you begin cooking, prepare all necessary ingredients. (In addition to the listed ingredients, you’ll need mozzarella cheese, lettuce, mayonnaise, and balsamic glaze, so have them ready.)

In a small bowl, combine 2 Tbsp soy sauce, 1 tsp oyster sauce, 2 Tbsp corn syrup, 1 Tbsp sugar, 1 Tbsp mirin, and 4 Tbsp water. Stir well until the sugar is dissolved to create a delicious sauce.

Crack 2 eggs into a bowl and whisk them thoroughly. (For extra soft scrambled eggs, you can add about 1 Tbsp of milk to the eggs.)

Heat a non-stick pan over low heat. Pour in the whisked eggs and gently stir with chopsticks to make soft scrambled eggs. Turn off the heat when the eggs are about 70-80% cooked, letting the residual heat finish cooking them.

Thinly slice the onion. For the leftover chicken, remove the meat from the bones and shred it into bite-sized pieces.

Add the sliced onions to a heated pan. Pour in a small amount of the prepared sauce and sauté until the onions are softened and slightly caramelized, being careful not to burn them. Then, add the shredded chicken and stir-fry together to enhance the flavor.

Place 2 bowls of warm cooked rice into serving bowls. Drizzle the remaining sauce over the rice and mix well. Top the mixed rice generously with shredded mozzarella cheese, then microwave for about 2 minutes until the cheese is melted and the rice is heated through.

Center the cheesy rice in a serving dish. Arrange torn lettuce leaves on top, followed by the sautéed onions and chicken, and finally, the soft scrambled eggs.

Drizzle mayonnaise over the ingredients in a zigzag pattern or your desired design. Using a piping bag will give a cleaner, more professional look.

Next to the mayonnaise, or on the opposite side, artfully drizzle the balsamic glaze. The rich, sweet balsamic glaze will add another layer of delicious flavor.
