Abundant Perilla Seeds! Creamy and Nutty Shiitake Mushroom Stir-fry Recipe
A fantastic combination of fragrant and chewy shiitake mushrooms with nutty and smooth perilla seeds! Shiitake Mushroom Stir-fry with Perilla Seeds is the ultimate side dish that adds richness to special occasions or everyday meals. The unique creamy texture and deep flavor of perilla seeds further enhance the chewiness of the shiitake mushrooms, bringing pure happiness to your palate.
Main Ingredients- 2 handfuls dried shiitake mushrooms (approx. 30g)
- 7-10 Tbsp perilla seed powder (adjust to taste)
- 1/2 Tbsp minced garlic
- 2-3 Tbsp perilla oil
- 1.5 Tbsp soy sauce
Cooking Instructions
Step 1
First, lightly rinse the dried shiitake mushrooms under running water to remove any debris, then soak them thoroughly in cold water. Let them soak for at least 1 hour, or preferably 2 hours, until the mushrooms become tender. (Tip: You can shorten the soaking time by using warm water, but the texture might be slightly different.)
Step 2
After soaking, rinse the rehydrated dried shiitake mushrooms once more with clean water. Then, squeeze out excess water firmly with your hands. Squeezing out the water well prevents the stir-fry from becoming mushy and helps achieve a delicious texture.
Step 3
Heat a frying pan over medium heat and add 2-3 tablespoons of perilla oil. Add 1/2 tablespoon of minced garlic and gently sauté over low heat to release its aroma. Be careful not to burn the garlic; sauté until it just starts to turn golden.
Step 4
Once the fragrant garlic aroma emerges, add the squeezed shiitake mushrooms and stir-fry them together. Sauté for about 2-3 minutes over medium heat, allowing the mushrooms to fully absorb the perilla oil and garlic flavor.
Step 5
When the mushrooms are lightly stir-fried, pour in about half a cup (approx. 50ml) of water and add 1.5 tablespoons of soy sauce. Stir well to ensure the soy sauce is evenly distributed among the mushrooms. Let it simmer for 2-3 minutes until the liquid slightly reduces. This step allows the mushrooms to absorb the seasoning and become more moist.
Step 6
Now it’s time to add the key ingredient for flavor: the perilla seeds. Add about one cup (approx. 100ml) of water and then add 7-10 tablespoons of perilla seed powder. Feel free to adjust the amount of perilla seed powder according to your desired consistency and level of nuttiness. (Tip: Adding too much perilla seed powder without enough liquid can cause clumping and a thick, unmanageable texture, so it’s best to mix it with water first.)
Step 7
The creamy and smooth texture characteristic of perilla seeds is truly captivating! It resembles a luxurious mushroom risotto. Adding plenty of perilla seeds will result in an even more nutty and rich flavor experience.
Step 8
After mixing well with the perilla seeds, continue to stir-fry over low heat for just 1-2 minutes. Overcooking can cause too much moisture to evaporate, resulting in a dry texture. Cook only until you reach your desired consistency, ensuring the mushrooms remain tender yet slightly chewy.
Step 9
Your Shiitake Mushroom Stir-fry with Perilla Seeds is ready! The creamy perilla sauce harmonizes beautifully with the delightfully chewy shiitake mushrooms, creating an exceptional taste. You’ll be amazed by the rich flavor and aroma, which are completely different from a simple shiitake mushroom stir-fry. It’s perfect as a side dish for rice or as a snack with drinks!
