Prepare the Aged Kimchi: Gently rinse the well-fermented aged kimchi under running water and remove any outer leaves. Then, cut it into bite-sized pieces (about 2-3 cm). The unique tangy and deep flavor of aged kimchi will enhance the dish.

Prepare the Spam (Richem): Slice the large can of Spam or Richem into about 0.5cm thick pieces, cut into bite-sized squares. Tip! Briefly blanching the sliced Spam in boiling water (for less than 10 seconds) will help neutralize excessive saltiness and remove excess oil and any unwanted odors, resulting in a cleaner taste.

Slice the Green Onion: Prepare half a stalk of green onion and slice it diagonally. The fragrant aroma of the green onion will further enrich the flavor of the stir-fried kimchi.

Begin Stir-Frying: Heat 2-3 Tbsp of olive oil in a pan. Add the prepared aged kimchi and sliced Spam (Richem). Then, add 1 tsp of minced garlic and 1.5-2 Tbsp of sugar. If your aged kimchi is very sour or salty, you might not need to add soy sauce, or you can adjust other seasonings accordingly.

Finishing Touches: Once the ingredients are nicely stir-fried, add the sliced green onion, 1 Tbsp of sesame oil, and a pinch of sesame seeds. Stir-fry quickly over high heat for another 1-2 minutes.
