When winter chills penetrate to the bone, a bowl of this spicy flour dumpling and noodle soup will have you sweating in no time, melting away the cold and bringing pure, blissful happiness. It’s a beloved nourishing dish that my mother, children, and all the ladies in our family adore. What is a nourishing dish? Anything that’s good for your body! You don’t need anything extravagant; simply warming yourself up from the inside out is enough. Experience the magic of this spicy soup when you’re feeling frozen!
Dough Ingredients- 2 cups all-purpose flour
- 2/3 cup water
- 3-4 pinches salt
Cooking Instructions
Step 1
In a bowl, combine 2 cups of flour, 3-4 pinches of salt, and 2/3 cup of water. Adjust the water amount as needed; a slightly softer dough will result in more tender and delicious dumplings.
Step 2
Gather the dough into a ball, cover it with plastic wrap, and let it rest. Resting the dough beforehand allows it to become chewy and flavorful without extensive kneading.
Step 3
Bring 6 cups of water to a boil in a pot, adding the 10 dried anchovies to create a broth. Once the broth is boiling, add the kimchi and then drop pieces of the prepared dough into the simmering broth. (Tip: You can add anchovies to cold water along with kimchi and then bring to a boil for a deeper flavor.)
Step 4
When the flour dumplings have mostly floated to the surface and are somewhat cooked, add the 120g of thin wheat noodles (Somen) and cook them together. Be mindful not to add too much noodle, as they can become mushy; for a typical 2-serving portion, use about 1 serving of noodles.
Step 5
Since the noodles will continue to cook even after you turn off the heat, it’s best to turn off the heat when the noodles are about 90% cooked. Taste the broth and add a little salt if needed to reach your desired seasoning. (Tip: Kimchi adds saltiness, so always check the seasoning after cooking before adding more salt!)
Step 6
Ladle the soup generously into bowls. Remember, the noodles continue to soften even after serving, so serve quickly for the best texture! If you enjoy a spicier kick, add some finely chopped green chili peppers to your bowl. Enjoy this warming meal that will chase away the cold!
