- 1 Tbsp addictive mala sauce (adjust to your preference)
- 1 pinch of fine salt (for seasoning)
- 3 Tbsp cooking oil (generous amount)
Cooking Instructions
Step 1
First, meticulously prepare all the ingredients you’ll need for the dish. Finely chopping the green onions will make stir-frying much easier. If you enjoy a spicier mala flavor, feel free to add a little more than 1 tablespoon to enhance the rich mala aroma! π
Step 2
In a clean bowl, crack 2 fresh eggs and add 1 pinch of fine salt. Whisk them together until well combined. Once the egg mixture is ready, add 1 bowl of the warmed multigrain rice. Using chopsticks or a spatula, gently mix the rice and egg mixture to coat each grain of rice evenly with the egg.
Step 3
Now, it’s time to start stir-frying. Heat a pan over medium heat and add a generous 3 tablespoons of cooking oil. Add all the finely chopped green onions to the pan. Stir-fry the green onions until they become golden brown and fragrant, allowing their distinct aroma to infuse into the oil.
Step 4
Once the aroma of the green onions is sufficiently released, pour the prepared rice and egg mixture into the pan. Begin to stir-fry, using a spatula to break apart the rice so the grains don’t clump together. Ensure the egg is cooked and mixed evenly with the rice, creating a fluffy texture.
Step 5
When the rice and egg mixture is about 80-90% cooked, it’s time to add the mala sauce. Pour 1 tablespoon of mala sauce into the center of the pan for balanced flavor, and quickly stir-fry to distribute it evenly among the rice grains. The mala sauce will blend well with the rice, creating a delicious color.
Step 6
This step is a special tip to add a unique texture to your fried rice! Try gently pressing the fried rice against the bottom of the pan with your spatula as you stir-fry. This will lightly toast some of the rice grains, creating a delightful subtle crispiness, similar to a pan-fried crispy rice base. Be careful not to burn it; just press lightly!
Step 7
Voila! Your Mala Egg Fried Rice is complete, featuring the spicy and aromatic flavor of mala sauce, savory eggs, and satisfyingly chewy multigrain rice! This appetizing fried rice, a feast for the eyes, is best enjoyed warm. π It’s a perfect brunch option that’s anything but ordinary!
