Ingredients- 11 large frozen cooked shrimp, peeled and deveined
- 1 cleaned squid body, sliced into 1cm rings
- 6 small fresh shiitake mushrooms, halved or quartered
- 3 dried red chilies (or similar mild chili), broken into pieces
- 1/4 medium onion, finely chopped
- 200ml high-quality olive oil
- 1 Tbsp coarsely minced garlic
- 1/3 Tbsp whole black peppercorns
- 3 pinches of salt
- 4 Tbsp sake (or cooking wine)

Begin by marinating the shrimp. Place the thawed shrimp in a bowl and pour over the sake (or cooking wine). Gently toss to coat, then let it sit for about 5 minutes to help reduce any fishy odors.
