  • Servings : 2 servings
  • Cooking Time : Within 30 minutes

Main Ingredients

  • 5 sheets of well-fermented kimchi (aged kimchi)
  • 2 servings of warm cooked rice
  • 1 can of tuna, drained
  • 1/4 fresh onion

Rice Seasoning

  • A pinch of fine salt
  • 1 Tbsp of fragrant perilla oil
  • 1/2 Tbsp of sesame seeds

Tuna Seasoning

  • 2 Tbsp of creamy mayonnaise
  • 1/2 Tbsp of sweet and sour sugar

Cooking Instructions

Step 1

First, prepare all the main ingredients. Especially rinse the aged kimchi thoroughly under running water to remove some of its sourness and saltiness. It’s crucial to squeeze out excess water.

Step 1

Step 2

Season the warm rice lightly with a pinch of salt. It’s best to season the rice when it’s not too hot.

Step 2

Step 3

Add 1 tablespoon of fragrant perilla oil to the rice to enhance its savory aroma.

Step 3

Step 4

Finally, add 1/2 tablespoon of sesame seeds and gently mix the rice without mashing the grains, ensuring the seasoning is evenly distributed. The rice seasoning is now complete!

Step 4

Step 5

Now, let’s make the tuna seasoning. Place the drained tuna from the can into a bowl, add 2 tablespoons of creamy mayonnaise, and 1/2 tablespoon of sweet and sour sugar.

Step 5

Step 6

Finely dice 1/4 onion and mix it into the tuna seasoning. The crispiness of the onion will complement the tuna and enhance the flavor. The tuna seasoning is also ready!

Step 6

Step 7

Arrange 3 sheets of the rinsed aged kimchi lengthwise, overlapping them. Then, overlap 2 more sheets on each side like ‘wings.’ This structure will prevent the tuna filling from spilling out and help maintain a neat shape.

Step 7

Step 8

Spread the seasoned rice thinly and evenly over the kimchi ‘wings.’ Just like making a kimbap roll, cover the surface thoroughly, reaching close to the edges.

Step 8

Step 9

Place the prepared tuna mixture in a long line on top of the rice. Be careful not to overfill, as too much tuna can make rolling difficult. Use a moderate amount.

Step 9

Step 10

Now, fold the side ‘wings’ of the aged kimchi inwards first to securely wrap the filling. This step ensures the filling stays in place and the roll is neat.

Step 10

Step 11

After folding the wings, roll the kimchi tightly from one end, just like making a kimbap roll. Rolling it firmly will prevent it from falling apart when sliced. Once rolled, slice it into bite-sized pieces.

Step 11

Step 12

Ta-da! The Aged Kimchi and Tuna Rolls, a delightful combination of crisp aged kimchi and savory tuna, are now complete. Enjoy this delicious dish, perfect as a lunchbox side or a special treat!
